How To make Chicken And Sausage Jambalaya

butter, or margarine stick

cup
green pepper, chopped

cn
tomato paste 6 oz.
1/4
teaspoon
thyme
1/2
teaspoon
pepper
1/4
cup
green onion, chopped
Directions:
Put chicken, 1 onion, (cut in half), celery and 1 garlic clove in pot.
Cover with water. Cook for approximately 1 hour or until chicken is
tender. Cook 2 cups of rice in 5 cups chicken broth (20 to 25 minutes or
until liquid is absorbed.) Debone chicken and cut sausage into 1/2 inch
cubes. Fry sausage and ham in Dutch oven until lightly browned. Remove
meat from pot and add margarine. Saute 1 chopped onion, pepper and 1/2 cup
chopped parsley until tender. Add chicken, sausage and ham to vegetables.
Stir in 2 minced garlic cloves, tomato paste, bay leaf, thyme, salt pepper
and Tabasco. Add cooked rice and mix thoroughly. Simmer over low heat for
15 minutes. Stir frequently. Remove bay leaf and toss in 1/4 cup chopped
parsley and 1/4 cup chopped green onion tops.

How to make Traditional Louisiana Chicken & Smoked Sausage Jambalaya
Mardi Gras is Tuesday (Fat Tuesday) March 1, 2022 Let's learn to make authentic Louisiana Jambalaya and enjoy a great New Orleans classic.

Ingredients
4 tablespoons butter
1 cup diced smoked ham
1 cup diced andouille smoked sausage or Polish Kielbasa
2 cups cooked chopped chicken thighs (4-6 cooked thighs, skinned and boned)
1 cup cooked cubed chicken breast (2 cooked chicken breast, skinned and boned)
1 ½ cups chopped onions (diced)
1 ½ cups chopped green bell pepper (diced)
1 ½ cups chopped celery (diced)
2 teaspoons minced garlic
Combine the next 9 seasonings in a small bowl.
2 large bay leaves
1 teaspoon sea salt
1 teaspoon white pepper
1 ½ teaspoon dry mustard
1 teaspoon cayenne pepper
1 ½ teaspoon gumbo file
*When purchasing from a grocer, check ingredients for pure sassafras leaves. Some manufactures cut the gumbo file with thyme which affects the taste of the final product.
2 teaspoons cumin
1 teaspoon dried thyme leaves
½ teaspoon dried basil leaves
2 cups uncooked rice
4 cups beef broth (You may use chicken; beef gives more flavor)
Let's get started:
Combine the 9 seasonings in a small bowl and mix thoroughly, set aside.
In a large heavy skillet or Dutch oven (cast iron is fine) melt the butter over medium-high heat.
Add the ham, sausage and cook for 5 minutes, stirring occasionally. Add the onions, bell peppers, celery, seasoning mix, and garlic. Stir well and continue cooking until mixture is brown, medium-low heat, about 10-12 minutes. Scrap the bottom of the pan to prevent the mixture from sticking. Stir in the raw rice and cook an additional 5 minutes.
Add the beef or chicken stock, stirring well. Bring mixture to a boil, then reduce heat and simmer until rice is tender. Allow the Jambalaya to cook for an additional 20 -25 minutes. Cover, turn off the heat, and let the dish continue to cook without heat for 10-15 minutes. Serve.

Chicken and Sausage Jambalaya
Chicken and Sausage Jambalaya - Cajun Jambalaya is full of Andouille Sausage, Chicken, the Holy Trinity, and has all of the flavors of an authentic Louisiana recipe! This is a easy one-pot meal that everyone Loves. Enjoy!
Leftover Jambalaya will last for up to 4-5 days if stored in an airtight container in the refrigerator or up to 4-6 months in the freezer.
Chicken and Sausage Jambalaya Ingredients
Instructions
2 Tbsp. Olive Oil, divided
1.5 lbs. Chicken cut into 1 inch pieces
3 - 4 Andouille link sausage cut into ½-inch slices
2 cups Sweet Onion finely chopped
1 cup Celery finely chopped
1 cup Green Bell Pepper finely chopped
2 cloves Garlic crushed or 2 tbsp minced Garlic
4 tsp Creole Kick (creole seasoning)
1 Tbsp. Worcestershire sauce
6 oz. can Tomato Paste
15 oz. can Diced Tomatoes with juice
2 ½ cups Long Grain White Rice
4 ½ - 5 cups Chicken Broth
Fresh Parsley for garnish
If you don't have Creole Kick or a Creole seasoning use the following seasons
1 tsp. Thyme, dried
1 tsp. Basil, dried
¼ tsp. Cayenne Pepper
1 ½ tsp. salt
1 tsp. Pepper divided

Cajun Chicken and Andouille/Sausage Jambalaya (Spicy)
Cajun Chicken and Andouille Jambalaya. You can make this inside on the stove and will feed roughly 6-8 people (depending on your serving size). Heads up, this recipe is a bit SPICY.
Ingredients List:
5 Slices of Smoked Bacon (for the grease…bacon does not go in the Jambalaya)
2 lbs Boneless, Skinless Chicken Thighs
1 lb Andouille or Smoked Sausage
1 Medium Yellow Onion
1 Green Bell Pepper
2 Stalks of Celery
2 Teaspoons Tony’s Chachere’s Creole Seasoning
1 Teaspoon Garlic Powder
1 Teaspoon Salt
1/4 Teaspoon Black Pepper
1/4 Teaspoon White Pepper
1/4 Teaspoon Red/Cayenne Pepper
1/4 Teaspoon Onion Powder
1/4 Teaspoon Basil
1/4 Teaspoon Thyme
2 Bay Leaves
Couple of Shakes Crystal Hot Sauce
**Optional** Kitchen Bouquet Browning Seasoning. I don’t believe it adds any flavor but does add color…I do not use it. Once you learn how to properly brown your meats you will not need either.
