Directions:
Spread chicken breasts flat: fold cheese and ham slices to fit on
top: fold breasts over filling and fasten edges with toothpicks.
On waxed paper, mix flour and paprika: use mixture to coat chicken
pieces.
In 12-inch skillet over medium heat, in hot butter or margarine,
cook chicken until browned on all sides. Add wine and bouillon (
or stock ). Reduce heat to low; cover and simmer 30 minutes or
until fork tender; remove the toothpicks.
In cup, blend cornstarch and cream until smooth; gradually stir
into skillet. Cook, stirring constantly, until thickened; serve
over chicken

Easy Chicken Cordon Bleu
This easy Chicken Cordon Bleu is baked in the oven and topped with a delicious two-ingredient sauce. I've included tips for making chicken cordon bleu ahead of time and wrapping them perfectly without toothpicks!
????️ PRIINT THE RECIPE:
INGREDIENTS:
▢8 thin slices ham
▢8 oz Swiss cheeses sliced or shredded
▢4 boneless skinless chicken breasts , about 2 pounds (.9kg)
▢salt and pepper
▢3 cups corn flakes cereal , crushed (or substitute breadcrumbs) (225g)
▢6 Tablespoons butter , melted (85g)
For the sauce:
▢1 cup mayonnaise (230g)
▢1-2 teaspoons yellow mustard , to taste (10.5g)

INSTRUCTIONS:
Pat the chicken dry with paper towels. Use a sharp knife to cut each chicken breast in half horizontally to create two chicken breast halves.
Place the chicken breast halves between two sheets of plastic wrap and use a meat mallet or rolling pin to pound them into thin and evenly (be careful not to pound so hard that the meat tears.).
Top each pieces of chicken with a slice of ham and a ham handful of shredded cheese. Roll tightly, tucking the sides a little, and place on a new piece of plastic wrap.
Wrap the chicken tightly in the plastic wrap, pinching the excess plastic on the sides to create a tootsie-roll shape and twisting them to create a firm chicken roll. Refrigerate the wrapped chicken bundles for at least 30-minutes or up to one day in advance.
Preheat oven to 400 degrees F. Remove chicken from fridge, unwrap and season with salt and pepper. Add cornflakes to a food processor and pulse into fine crumbs. Add crumbs to a shallow dish or pie plate. Melt butter in a separate shallow dish.
Dip the chicken bundles in melted butter, and then into the cornflake crumbs, pressing lightly to help the crumbs stick to the chicken. Transfer to a lightly greased baking sheet.
Bake on the center oven rack for about 30 minutes, or until chicken is cooked through (160 degrees on a thermometer inserted into the chicken, not the filling.)
Make the sauce by stirring the mayo and mustard together. Taste and add more mustard, as needed, to taste.

Chicken Cordon Bleu Recipe:
Chicken Breast - 2 nos
Salt - 1 tsp
Black Pepper Powder - ½ tsp
Garlic Powder - ½ tsp
Dijon Mustard - 2 tsp (1 tsp each)
Ham Slices - 2 nos
Cheese Slices - 3 nos
Other Ingredients:
Maida - ½ Cup
Salt - ¼ tsp
Black Pepper Powder - ¼ tsp
Egg (beaten) - 1 no
Breadcrumbs - ¾ Cup
Oil - For Shallow-Frying
Cooking Instructions:
1. Place a sheet of cling wrap over the chicken breast. Flatten it using a heavy object such as a meat mallet, rolling pin or a flat pan.
2. Apply dijon mustard on the inner side of the flattened chicken breast. Season with salt, pepper and garlic powder.
3. Arrange a slice of ham and cheese, around ½ inch space on the sides.
4. Cover it tightly in cling wrap. Tie the edges and twist in opposite sides to tighten. Freeze for 15-20 minutes so that it forms up and holds its shape.
5. Season the maida with salt and pepper in a bowl. Keep the beaten egg and breadcrumbs ready in separate bowls.
6. Remove the cling wrap and coat the chicken in maida, then the eggs and finally in breadcrumbs. Make sure that it is completely coated.
7. Shallow fry on medium heat until golden brown on all sides, turning it occasionally to ensure even cooking.
8. Once it is completely golden brown on the outside, transfer to a baking dish and bake for 8-10 minutes at 180°c in a preheated oven.
9. Rest for 5 minutes, then slice and serve.
Cooking Tips:
1. The chicken can be prepped and shaped ahead of time. Store in the refrigerator instead of the freezer, and use as needed up to the next day.
2. You can bake the chicken cordon bleu instead of frying it. Follow the same instructions to coat the chicken, then bake in a preheated oven at 180°c for 25-30 minutes.

- 40g flour
- 1 tsp garlic powder
- Salt and pepper to taste
- 2 eggs beaten

Method
1. Start by butterflying the chicken breasts by carefully running your knife down the side of the breast. Once you're 3/4 of the way through, open up the chicken breasts, it should look like a love heart.
2. Place the chicken breast between two pieces of parchment paper and use a kitchen mallet or small saucepan to pound the chicken so it's nice and flat and even.
3. With the smoothest side of the chicken breasts facing down, lay on your sliced ham and sliced cheese.
4. Then roll the chicken breast up until you create a cylindrical log.
5. Get your breading station ready by placing the eggs in one bowl, the breadcrumbs in another and the flour in the third one. Add the garlic powder, salt and pepper to the flour and mix well.
6. Take your rolled chicken breasts and dust in the flour, followed by a dip in the egg mixture and finally roll in the breadcrumbs.
7. Place the crumb chicken breasts onto a lined baking tray and bake at 180°C for 25-30 minutes, or until golden and cooked through. If using a thermometer, you're looking for an internal temperature of 70°C
8. Served with mash potato and I like mine with a little bit of mustard.
