How To make Chicken Diane
BARB DAY:
6 oz Pasta; uncooked, dry
3/4 c Unsalted butter
1 tb Cajun Magic Poultry
- Seasoning Plus 2 teaspoons 3/4 lb Chicken breasts; boneless,
- skinless, cut into strips 3 c Mushrooms; fresh, sliced
1/4 c Green onion; tops only,
- minced 1 ts Garlic; minced
1 c Chicken stock; or water
Cook pasta according to package directions just to al dente stage. Immediately drain and rinse with hot water to wash off starch, then with cold water to stop cooking process; drain again. To prevent pasta from sticking together, pour a very small amount of oin in the palm of your hand and rub through the pasta. Mash 4 tablespoons of the butter in a medium bowl and combine with the Poultry Magic and chicken. Heat large skillet over high heat until hot, about 4 minutes. Add chicken pieces and brown, about 2 minutes on first side and about 1 minute on the other. Add mushrooms and cook 2 minutes. Add green onions, parsley, garlic and stock. Cook 2 minutes more or until sauce is boiling rapidly. Add remaining
butter (cut into pats), stirring and shaking pan to incorporate. Cook 3 minutes and add the cooked pasta. Stir and shake the pan to mix
well. Serve immediately.

INGREDIENTS: (2 servings)
2 large chicken breasts
5-6 cloves garlic (minced)
2 cloves garlic (crushed)
1 medium onion
1/2 cup chicken stock or water
1 tsp lime juice
1/2 cup heavy cream (sub fresh cream)
Olive oil
Butter
1 tsp dried oregano
1 tsp dried parsley
Salt and pepper (as needed)
*1 chicken stock cube (if using water)

FAQ:
• Why lime juice?
As wine is not used in this recipe, lime juice is added for acidity (sourness). Otherwise the sauce might seem too rich
• When to add salt to the sauce?
Add salt towards the end as stock/stock cubes have added salt. I did not find the need to add more salt
• What else can be added to the dish?
Mushrooms, broccoli, bacon, spinach and parmesan cheese can also be added for additional flavor
• What to pair with the dish?
Pasta, steamed veggies, mashed potatoes, rice, couscous or crusty bread.

TIPS:
• Chicken stock can be substituted with white wine as well. Omit lime juice if using white wine
• The entire sauce needs to be cooked on low flame so as to prevent it from splitting
• Reduce the liquid before adding cream
• Add 1/4 cup parmesan cheese to add more flavor

Easy Chicken Diane with Mushrooms and Pasta (Similar to Cheesecake Factory recipe)
2 small Onions, chopped
2 large Garlic, chopped
4 skinless, boneless Chicken breast cutlets
Salt & Black Pepper as much as you like
1 to 2 C Chicken broth
1/4 C Brandy
1/4 C Heavy Whipping Cream
3 Tsp Sour Cream
1/2 Tsp Worcestershire sauce
1 Tsp Dijon-style mustard
3 Tsp Canola Oil
3 to 4 Tsp unsalted Butter
8-ounce sliced fresh button Mushrooms
Cook on medium Heat.
Garnish:
Chopped fresh flat-leaf Parsley or Chive & Lemon wedges.
Serve with cook Angela hair Pasta. (follow the direction on the box)
