David Chang Makes Chinese Chicken Noodle Salad
Dave Chang is back in the kitchen making an on-the-fly version of the type of salad that he likes eating for lunch at home. He used leftover noodle shake from the Chili Crunch “Carbonara” and got inspired to bring together a version of what has become known as Chinese Chicken Salad. He repurposes rotisserie chicken and uses his favorite vessel for salads: iceberg lettuce. Dave also makes two vinaigrette versions, so feel free to follow whichever method depending on what you have available at home. He loves showing how versatile our pantry products are and brought this recipe to life with leftover Momofuku Soy & Scallion Noodles, Momofuku Rice Vinegar, Momofuku Tamari, and Momofuku Toasted Sesame Oil.
As always, there's no plan, no preparation but this is the essence of home cooking. Dave's not trying to hit the bulls-eye, just the target.

Invented by Sylvia Cheng Wu also known as Madame Wu in the 60s and made popular by the original celebrity chef Wolfgang Puck, The Chinese chicken salad has become an obsession in California, especially with celebrities. It's not hard to see why. It's refreshing, it's light, it has incredible texture and crunch, and an Asian-inspired dressing that has all those addicting umami flavors that you could eat with a spoon. Learn how to make an easy Chinese Chicken Salad! It is light, tangy, crispy, and low in sugar compared to a Chinese Chicken Salad or Oriental Chicken Salad you may find at a restaurant.
I sweeten the dressing with honey and fruit juice and the additional sweetness comes from natural ingredients such as sliced apples, dried cranberries, and the signature mandarin orange slices.
Instead of deep fried chow mein noodles, I show a light and crispy baked wonton wrapper crisp and toasted sunflower seeds which make each bite exciting because of all the different textures!
If you are making a vegan salad you can of course use agave instead of honey and swap out the chicken for some cubed baked tofu or seitan!

Chinese Chicken Salad Recipe
Ingredients:
For the dressing:
¼ cup grapeseed oil
2 tbsp rice vinegar
2 tbsp honey
2 tbsp peanut butter
1 tbsp dijon mustard
1 tsp sesame oil
¼ tsp Chinese five spice
¼ tsp salt
½ tsp grated ginger
1 tsp grated garlic
For the salad:
1 tbsp grapeseed oil
1 chicken breast, sliced through the middle (or two chicken cutlets)
salt
Chinese five spice, for dusting the chicken
4 scallions, sliced (1/2 cup)
1 small head Napa cabbage (6 cups)
1 small head romaine (4 cups)
3 medium shredded carrots (1 cup)
½ cup chopped mint leaves
½ cup salted, roasted peanuts
1 can mandarin oranges, for garnish, optional
Directions:
To make the dressing, whisk together all ingredients until combined.
Heat a nonstick skillet over medium heat. Add the oil. Season both sides of the chicken with salt and Chinese five spice, then cook the chicken for about 4 minutes on each side until completely cooked through. Let the chicken cool, then shred with two forks or with your fingers.
Add the chicken to the dressing, as well as the scallions, napa cabbage, romaine, carrots, mint, and peanuts. Toss well. Then add the oranges, if desired. Serve immediately.

Have you been to his restaurant in California? If so it’s very likely that someone at your table ordered this beautiful salad creation because the rumor is that it’s the most popular order on the menu. For a great reason! The flavors and textures happening in this salad are CRAVEWORTHY!
Chinois is a French word and is pronounced SHEEN-WAA. It is the French word for Chinese.
So, I’m not guaranteeing this salad will taste exactly like the famous restaurant salad (it won’t because I made lots of modifications – so be sure to go try his salad some time as well) BUT I am guaranteeing this is a super delicious FUN fresh alternative to make at home when you’re craving something a little out of the ordinary.
