Today I’m going to be sharing with you how to make the best walking taco casserole now let me tell this dish is perfect for those busy days, I guarantee you everyone will love it! And if you busy like myself, but want to feed your family something fast, easy and delicious, you need to try this! Walmart plus just makes it even easier! It literally took me less than 10 minutes to gather all my ingredients to my cart, pick your delivery time, check out and get them delivered to my front door, it’s amazing!!! For the meat:
2 lbs ground beef, I used 97% lean 3% fat
2 tomatoes chopped
1 yellow onion chopped
1 cup flame roasted hatch valley green chile
2 tsp minced garlic
2 tsp oregano
2 tsp chili powder
2 tsp garlic salt
1 1/2 - 2 tsp salt
1 tsp onion powder
1 tsp ground cumin
1 tsp black pepper
Mexican blend shredded cheese
8 oz cream cheese
Jalapeños and 1/4 cup of its juice
1/4 sour cream
Your favorite chips I’m using frito scoops but try it with Doritos as well it’s delicious
Toppings:
Fresh lettuce, pico de gallo, green onions and avocados

INGREDIENTS:
600 g Cooked Chicken
300 g Condensed Cream of Chicken Soup
250 ml Light Sour Cream
300 g Can Chopped Tomatoes
2 Green Chillies
400 g Tin of Black Beans
20 g Taco Seasoning Mix
Large Bag Tortilla Chips
160 g Shredded Cheddar Cheese
1 Tomato
2 Spring Onions
Fresh Bunch of Corainder
STEP 1: MIX INGREDIENTS
Preheat your oven to 180C. In a large bowl mix together your chicken soup, chicken, sour cream, chillies, chopped tomatoes and the black beans. Sprinkle over the taco seasoning and give everything a good mix.
STEP 2: ADD TORTILLAS
Add half of the chicken mixture to the bottom of a baking dish and then top with a layer of crushed up tortilla chips Top with the second half of the chicken mixture and then add another layer of the crushed tortillas.
STEP 3: BAKE AND SERVE
Top with foil and bake in the oven for 20 minutes. Then remove sprinkle over the cheese and return to the oven for a final 5 minutes or until the cheese has melted and is starting to brown.
Mexican Chicken Casserole
Just 30 minutes in the oven and your family will be enjoying this delicious Mexican Chicken Casserole!

Ingredients
3 cups crushed tortilla chips or Dorito Nacho Cheese chips
15 oz. black beans drained and rinsed
2 cups chopped cooked chicken (rotisserie chicken works well)
1 teaspoon ground cumin
21 oz. cream of chicken soup 2 (10.5 oz) cans
1 10 oz. can Rotel tomatoes undrained
2 cups shredded jack cheese
2 cups shredded medium cheddar cheese
1 tomato diced
1 bunch cilantro rinsed and chopped
Jalapeños optional
Instructions
Preheat oven to 350 F and grease a 13x9 casserole dish with non-stick cooking spray.
Crush tortilla chips lightly and sprinkle approximately 1 cup across the bottom of the baking dish.
Layer diced chicken and black beans over the crushed chips.
Stir 1 teaspoon of cumin into the cream of chicken soup. Spread the soup mixture over the chicken and beans, using a spatula to gently spread it evenly over the entire top. Add canned tomatoes over the soup layer.
Sprinkle cheese evenly over the tomato layer and top with remaining crushed chips.
Bake for 25-30 minutes or until casserole is hot and bubbly and the cheese is fully melted.
Garnish casserole with cilantro and chopped tomatoes.
Serve immediately with a slice or two of fresh jalapeño.
Notes
Do not drain Rotel tomatoes before adding to casserole.
You can substitute Doritos for regular tortilla chips.
For another flavor element, mix a 4 oz. can of diced chiles into the soup/cumin mixture.
Prepare ahead of time except for the tortilla chips over the top. Cover with plastic wrap and refrigerate. When ready to bake, remove the plastic wrap and sprinkle with chips. Bake until hot and bubbly.
