How to Make Chicken with 40 cloves garlic
This Chicken with 40 Cloves of Garlic is an incredibly simple French recipe that includes tender chicken cooked with garlic cloves in a delicious sauce. You’re going to LOVE it!
???? Ingredients ????
4 Tablespoons butter, divided
1 Tablespoon vegetable oil
6 to 8 chicken thighs
salt and pepper
3 heads garlic
6 sprigs fresh thyme, or 1/2 tsp, dried
1 bay leaf
1/2 cup white wine
1 1/2 cups chicken stock
2 teaspoons cornstarch
???? Instructions ????
1. Add 2 cups of water to a saucepan and bring to a boil. Separate garlic cloves and add to the water. Cook for 1 minute, then drain and peel garlic.
2. Pat the chicken pieces dry with paper towels and season well with salt and pepper on both sides.
3. Heat a large deep pan or skillet over medium heat. Add 2 Tablespoons butter and oil until hot.
4. Add chicken, skin side down and cook for 5 minutes, until the skin is golden brown. Flip and cook on the other side for 3 minutes.
5. Distribute the garlic cloves around the chicken and add thyme and bay leaf.
6. Cover the skillet and cook over med-low heat for 30-35 minutes or until the chicken is cooked through and the juices run clear when pierced with a fork.
7. Transfer the chicken and garlic to a platter and cover with foil to keep warm. Discard the bay leaf.
8. Turn the skillet to high heat and add the wine. Cook until the liquid has reduced by half, about 5 minutes. Whisk the cornstarch into the chicken stock and add to the pan. Cook until the sauce has slightly thickened, 2-3 minutes. Remove from heat and stir in remaining 2 Tablespoons of butter. 9. Place the chicken on a serving platter and pour sauce over the chicken.
10. Serve with French green beans and a toasted baguette for spreading the cooked garlic cloves on.

Iron Skillet Chicken with 40 Cloves of Garlic Recipe - Noreen's Kitchen
Greetings! Here is fantastic, easy roast chicken recipe that has its history steeped in French tradition! Chicken with 40 cloves of garlic is a French classic that is timeless. In the 70's it was seriously popular and in the 80's is when I was first introduced to it by the Frugal Chef, Jeff Smith, one beautiful Saturday morning during my PBS station's cooking show line up.
Of course Jeff Smith paved the way for many a new television cook, but in my heart he will always have a special place. How could you not love him? His approach to life and food was amazing and it is in honor of him that I share this recipe with you.
Roast chicken can seem ubiquitous and superfluous, but it needent be. In it's simplicity, lies its beauty. Take a chicken, lather it with butter or oil, sprinkle with salt and pepper, stuff it with a lemon or some aromatics and another sprinkle of whatever herbs you choose, then put it in an iron skillet, surround it with a ton of cloves from the stinking rose and put that in a cracking hot oven for just under an hour. Be sure to baste a couple of times to keep the skin moist and crisping.
When you take this from your oven, you are going to be so happy that this is your dinner! Allow to cool, carve and eat. The garlic is an amazing accompaniment to roasted potatoes and broccoli or just a green salad, but don't discard the garlic, because it will keep covered in a bit of oil for at least a week. Smear that on some toasted baguette and you are in heaven.

30 Cloves Garlic Chicken Recipe | French Bistro Recipes
The 30 cloves of garlic chicken is made with chicken that is braised in wine and cognac with 30 cloves of garlic, this French bistro packs a punch of flavors.

This French cuisine 30 cloves garlic chicken recipe dates back from our grandmas time and there is no clear origin that I know of as to why someone decided to cook a chicken with 30 or even 40 cloves of garlic. I know that the French soil is perfect for garlic growing and many region also have farm chickens widely available so perhaps that back in the days, farmers did not have much else to cook just decided to use what they had: garlic and chicken.but who knows?
Anyway in this modern day french bistro food version, we are simply sauteing pieces of chicken with lots of garlic cloves. the dish is then flambe with cognac and deglazed with white wine to create that super concentrated jus full of flavors. The garlics clove are cooked in their sleeves so the chicken does not taste that must of garlic but what you do get, is garlic cloves that are cooked from inside and almost become pureed garlic.
in this video I give two version of that easy garlic chicken recipe. one version is the original French bistro chicken recipe and the second is my twist of that recipe where I only create a quick creamy garlic sauce at the end. no use to say that if garlic is your thing you have to try that 30 cloves garlic chicken recipe.
