How To make Chicken with Peaches
2 tablespoons oil
2 1/2 pounds boned and skinned chicken breasts -- cut into strips
1 teaspoon salt
1/2 teaspoon five-spice powder
1 clove garlic
minced fine
1 8oz can sliced peaches :
liquid included
1 tablespoon sugar
2 tablespoons lemon juice
1/2 cup chicken broth
2 teaspoons cornstarch
1 tablespoon water
12 ounces snow peas
Hot cooked rice
1. Heat a wok or wok frying pan over medium-high to high heat. Add 1 tablespoon of oil. When the oil is hot, add the chicken, salt, and five-spice powder, and stir-fry for 4 to 5 minutes. Turn often, browning on all sides. Remove from wok and keep warm. 2. Add remaining 1 tablespoon oil to wok and heat. Add the garlic and stir-fry until just brown. Add the peaches and sugar, stirring until the sugar is melted and peaches are warm, then add the lemon juice and broth. Bring to a boil. 3. Mix the cornstarch with the water, blend throroughly, then add to the wok and stir in immediately. Add the snowpeas, cover, and steam for 30 seconds. Return the chicken to the wok and stir in. Cover and steam until chicken is reheated, 1 to 2 minutes. Serve over hot rice.

INGREDIENTS:
Chicken thighs
Salt to taste
2 tsp black pepper
2 tsp onion powder
2 tsp garlic powder
2 tsp chicken seasoning
1-2 tsp kickin chicken seasoning (optional)
2 tsp smoked paprika
2 tsp dried parsley
1 tbsp green seasoning
1-2 tsp garlic paste
1-2 tbsp olive oil
Sauce:
1/2 cup peach juice
1/4 cup honey
1 tsp kickin chicken seasoning
1 tsp soy sauce
Marinate meat for minimum of 1-2 hrs before cooking.
Meat was baked at 375• for 1hr-1hr 15mins

How to cook Chicken with Peaches [Ep. 15]
Mixing chicken and peaches is not familiar to most people. But as Leni, my childhood friend cooking with me this week, tells us: it can be like a sweet fried rice dish. So that's what we do! Leni and I go “untraditional” and truly play with some rice, chicken, and peaches!
Here’s how to make what we did:
-Get Vaccinated
-Cook up some rice (no pressure cooker required!)
-Heat up a cast iron pan (or the heaviest pan you have)
-Peel and chop up some peaches or nectarines or any combination thereof
-Cube up one or two chicken breasts and season with garlic powder, cumin, red pepper flakes, salt and pepper.
-Cook the chicken at high heat until browned on all sides. It’ll be cooked to 165, I bet.
-Warm up the fruit on the same pan and mix in the rice.
-Add it all together and revel in the weirdness.
Eat more than you think you will. It grows on you.

One Pan Roasted Chicken Thighs with Peaches and Shallots | The Peach Truck Recipes
ONE PAN ROASTED CHICKEN THIGHS WITH PEACHES AND SHALLOTS
Yield/ Number of Servings: 4
Hands on Time: 15 min
Total Time: 35 min
8 bone in, skin on chicken thighs
1 ½ tsp. kosher salt
1 tsp. freshly ground black pepper
3 Tbsp. olive oil
1 tsp. lemon zest
4 shallots, halved
2 peaches, cut into large wedges
½ cup pitted Castelvetrano olives, halved
½ tsp. red pepper flakes
1 Tbsp. chopped fresh thyme
2 Tbsp. fresh lemon juice
1. Heat oven to 425F. Sprinkle chicken all over with salt, pepper, and lemon zest.
2. Heat 1 tablespoon oil in a very large ovenproof skillet over medium high heat. Add chicken, skin side down, and cook 4 minutes or until golden brown. Flip chicken and cook 4 minutes. Add shallots, peaches, olives, pinch of salt, red pepper flakes, and 2 tablespoons olive oil to skillet. Transfer to oven and cook 15-20 minutes or until chicken is done. Sprinkle with thyme and drizzle with lemon juice.
