This week, Basics and Binging collide to bring you: Deadpool's chimichangas! Tortillas are eerily missing from all NYC grocery stores, so I ended up having to make 'em from scratch - definitely not necessary, but it makes for a standout deep-fried burrito!

3 Cloves of finely chopped garlic
1 big Onions Sliced
Half of every color bell peppers
1 Medium zucchini (peeled and diced)
1 cans Pinto beans (Rinsed and Drained)
1/4 Cup Jalapeno
Oil
Salt and Pepper to Taste
1 Tbsp Taco Seasoning Mix
1 Tsp Cumin Powder
1 Tsp Chili Powder or Parpika

Now I'm going to show you how easily you can make it at home for yourself, friends & family. You're gonna love it!

Chicken Chimichangas
Ingredients:
4 cups cooked shredded chicken (I used a rotisserie chicken)
2 tablespoons canola oil
¼ cup diced yellow onion
1 clove garlic, minced
1 can of tomato sauce
1 cup chicken broth
1 teaspoon NM red chile powder
½ teaspoon cumin
½ teaspoon salt
1 cup homemade salsa (you can also use your favorite store bought brand)
¼ cup greek yogurt
2 cups refried bean
2 cups mexican cheese blend
6 burrito style tortillas
Directions:
Heat 2 tsp oil in a 10-inch non-stick skillet over medium-high heat. Once hot add onion and saute until translucent and tender, about 2 minutes. Add garlic and saute 30 seconds longer.
Add in tomato sauce, chicken broth, chile powder, cumin, salt and salsa. When all the mix is well combined and heated through, reduce the heat and simmer, stirring frequently until sauce has thickened and reduced by about half and onions are tender, about 6 minutes. Season with salt and pepper to taste, stir in sour cream and toss in chicken.
Preheat the oven to 350 degrees.
Warm tortillas on a comal prior to building the chimichanga. This will help them to fold together easier. Layer each tortilla with 3 tbsp shredded cheese to the tortilla, followed by a 1/2 cup of the chicken mixture. Then add more cheese after adding the chicken mix. Fold the sides in then snuggly fold bottom side up and roll to wrap. You can use toothpicks to keep it from opening up, but I find it easier just to lay the flap side down.
Layer chimichangas on a baking sheet. Spray each chimichanga with canola spray. Cook them in the oven for about 15 minutes. The last minute put the oven on broil, this will make the chimichangas extra crispy.

⭐️ CHIMICHANGAS (Chicken)
PICADILLO
1 lb lean ground beef
1/2 small onion
1/2 small bell pepper
2 cloves garlic
1 Tbsp beef bouillon powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp ground cumin
1/4 tsp black pepper
1/4 tsp salt
3/4 cup water
CHILE CON QUESO
1/2 Tbsp unsalted butter
1 jalapeño
1 Roma tomato
1 Tbsp fine diced onion
1 clove of garlic
1/4 tsp smoked paprika
1/8 tsp onion powder
8 oz Velvetta cheese
4 oz sour cream
1/2 cup whole milk
SOFT FLOUR TORTILLAS
3 cups all-purpose flour (400 to 410 g )
2 tsp baking powder (7.5 g )
8 oz hot water (236.59 ml )
1/3 cup lard or shortening (65 g) *use only 1/4 cup (59 ml) if using oil
1 tsp salt (5 grams salt) *use salt of choice
**For burrito size tortillas divide the dough into 6 to 8 dough balls

A chimichanga is a delicious fried burrito. There is several ways you can make one. For instance, you are able to fill it with different ingredients such us beans, rice, cheese, and shredded chicken. What sets this recipe apart is the wonderful sweetness and smokiness derived from the chipotle peppers. At the same time, you will enjoy a nice kick of heat. It is such an easy recipe to make, yet so delicious!

Servings: 6 chimichangas
4 cups shredded chicken
Filling
2 chiles chipotles, seedless :

3/4 ea white onion, medium
2 ea garlic cloves, peeled
1/2 tsp achiote powder :
