How To make Chinese Style Sauteed Firm Tofu
24 oz Firm tofu
2 tb Oil
1/2 ts Salt
1 sm Onion, thinly sliced
6 md Mushrooms, sliced
1 sm Carrot, cut into matchsticks
2 md Green bell peppers, thinly
sliced 1 tb Sake or white wine
1 1/2 tb Soy sauce
1 ts Grated ginger
1 tb Sugar
1 tb Water
1 ts Cornstarch dissolved in 3

tb water Cut tofu crosswise into pieces the shape of French-fried potatoes. Heat a wok, coat with oil & sprinkle on the salt. Add onion, then the mushrooms, stir frying each over high heat for about 30 seconds. Reduce heat to medium-low. Add carrot, green pepper & tofu in that order, sauteeing each for about 1 minute. Reduce heat to low & add sake, soy sauce, ginger, sugar & water. Simmer for 3 to 4 minutes. Stir in dissolved cornstarch & simmer 30 seconds for another 30 seconds. Frying can be intimidating, but I’m kinda obsessed with this crispy tofu katsu. ???? It’s delicious with Japanese curry or tonkatsu sauce (or, let’s be real — with any of your favorite sauces).
I highly recommend freezing and defrosting your (firm or extra-firm) tofu ahead of time. This firms up the texture and makes it a little meatier. It also makes it way easier to press out the extra water.
Cut your tofu into little 1/2” steaks. Season with salt and pepper (you can add some chick-style seasoning if you have it). Then dredge with flour, dip in soy milk, and coat with panko. (Or use a plant-based egg substitute as your liquid if you prefer.)
Then shallow-fry in a neutral oil till each side is deep golden brown. It only takes a few minutes. I keep it around medium-high heat. Lower it if it seems to be browning too fast.

Neutral oil
1 shallot, sliced thinly cross-wise
3 cloves garlic, sliced thinly length-wise
1/2 Thai red chile or similar, sliced thinly
2 scallions, cut into 2-inch segments, making sure white and green parts are separated
2 tablespoons light soy sauce
2 teaspoons abalone sauce
1 teaspoon rice wine (Mijiu or Shaoxing wine)

How to make Spicy Szechuan Tofu Stir Fry
This delicious Sichuan spicy tofu stir fry recipe made with crispy tofu and vegetables in a spicy, Sichuan style delicious sauce. This classic Chinese tofu is better than takeout and is ready in 30 minutes!
Written Recipe ▶️
???? Ingredients
▢400 gram Firm tofu About 14oz, Firm or extra firm tofu cut into 1-inch dices.
▢½ Onion Cut small dices
▢1 Green chilli pepper Or bell pepper cut small pieces
▢1 Red chilli pepper Or bell pepper cut small pieces
▢1 Carrot Cut 1-cm cubes
▢1 tbsp Garlic Finely chopped/minced
▢½ tbsp Ginger Finely chopped/minced
▢5-6 Dry long red chilli Sichuan chilli or choice of dry chilli mild/hot
▢1 tbsp Sichuan peppercorns Roasted and crushed into medium coarse
▢Vegetable oil for frying Or neutral flavour oil
Tofu Seasonings and Coating
▢1 tbsp Soy sauce Light soy sauce or regular all-purpose soy sauce
▢8-10 tbsp Corn starch About ½ cup, corn or potato starch
Sauce
▢2 tbsp Light soy sauce Or all-purpose soy sauce
▢½ tsp Dark soy sauce
▢1 tbsp Sugar
▢1 tbsp Chinese black rice vinegar Or rice vinegar
▢1 tsp Sesame oil
▢1 tsp Corn starch
▢2 tbsp Water
Instruction
Pat dry the tofu and cut it into 1-inch size cubes and marinate with soy sauce.
Coat the tofu with corn starch and fry them until crispy.
Prepare the sauce and set them aside
Stir fry the vegetables and follow with ginger, garlic, Sichuan peppercorns, and chilli peppers.
Pour the sauce in and fried tofu pieces.
Combine everything well until the sauce is thick and glossy.
Remove from heat and enjoy with rice or noodles.
