How To make Chocolate Pepper Cookies
1 1/2 c (3 sticks) unsalted butter
1 1/4 c Sugar
2 lg Eggs; lightly beaten
3 c Sifted all-purpose flour
1 1/2 c Unsweetened cocoa powder
1/4 ts Freshly ground black pepper
1 pn Cayenne pepper
1 ts Ground cinnamon
5 oz Semisweet chocolate; for
-decoration Recipe by: riacmt@ubvmsb.cc.buffalo.edu (Carol Miller-Tutzauer) Cream the butter and sugar. Add the eggs and beat until fluffy. Sift together the dry ingredients. Add to the butter mixture and beat until well mixed; if dough seems too soft, add up to 1/4 cup more flour. Shape into a flattened round, wrap, and refrigerate at least 1 hour. Preheat oven to 350 deg F. and line baking sheets with parchment paper. On a well-floured board, roll out the dough until 1/8 inch thick. (It's best to divide and roll out a quarter or third of the dough at a time, leaving the remainder in the refrigerator. Try to be careful not to get the flour dusted on the top of the dough as the cookies are not quite as pretty then.) Cut dough into shapes and set 1 to 2 inches apart on baking sheets. Leftover dough can be rolled and cut once more. Bake for 8 to 10 minutes, or just until crisp; do not allow to darken. Cool on racks. Melt the chocolate and drizzle over the cooled cookies in a haphazard fashion; allow to harden completely before serving. -----

Pepper cookies are a Christmas staple in my home country. But they are equally popular in other Baltic states and Scandinavia. Even though they look like gingerbread cookies – they are not. There is no ginger in this recipe. As the name suggests they contain pepper. The black pepper gives them a bit of a kick, but it is the other spices that really make this recipe come alive.
Heavy on cloves and cardamom which make them super fragrant. Cinnamon is also included and to tie it all together and give a slightly earthy flavour there is ground coriander. An unusual spice combination some may say, but that is what makes them unique, and it really works. Try it and you may just love it!

Pepper Bakes Shiok-olate Chip Cookies

Shiok-olate Chip Cookies
Ingredients:
• 260g unsalted butter
• 320g / 1 1/2c brown sugar
• 1 tsp vanilla essence/extract
• 2 eggs
• 500g all purpose flour, sieved
• 300g / 1 1/3c semi-sweet chocolate chips (or peanut butter chips or white chocolate chips; whatever floats your boat)
• 1/2 tsp baking soda
Procedure:
1. Cream butter, sugar, vanilla, and eggs together
2. Sieve 500g flour
3. Mix flour and baking soda
4. Add flour mixture to wet ingredients (butter, sugar, etc)
5. Stir in chocolate chips
6. Spoon spoon-fulls of dough onto a baking sheet + tray (2 rows of 8 for us, but if you want them bigger or smaller, it's up to you!)
7. Bake at 180º C / 356º F for 10-15 minutes (we baked them for 10-11 minutes only!)
8. Cool cookies on a baking rack
9. DEVOURRRRRR + have a glass of milk

Glaze:

45 g water (3 tbsps)

Latvian Pepper Cookies Recipe - Very Easy! - Piparkukas Recepte
Every Christmas homes all around Latvia and indeed the Baltics and Scandinavia make pepper cookies ready for the festive season. They are so easy and fun to make, every one can join in around the table and make it a great family time together.
It's important to remember that pepper cookies are not gingerbread at all despite them often being translated this way. Many recipes like ours don't even include ginger!
Recipe:
330g Butter
100g Dark sugar
100g Dark honey
200g white sugar (or light brown sugar)
900g All purpose flour (adjust when kneeding to suit)
2 teaspoons of baking soda
Spice Mix:
2 tsp ground cinnamon
2 tsp ground cloves (leave out if you don't like)
2 tsp ground cardamons
2 tsp ground coriander
2 tsp ground black pepper
Optional extra spices:
Ground ginger
Ground allspice
Christmas in latvian is called Ziemassvētki and is also celebrated by people whose religious belief is not Christianity. Nowadays the customary Ziemassvētki traditions are decorating the Ziemassvētku egle (Christmas tree), Ziemassvētku vecītis (Santa Claus, lit. Old Christmas Man), baking piparkūkas and mandarin scent.
In 2018 we left the UK to come to Gita’s family homestead here in north Latvia, not far from the Estonian border and now we live somewhere nowhere in the middle of a forest in a house built by Gita’s grandfather. Recipe: Pfefferkuchen (German pepper cookies)
These soft cookies are similar to gingersnaps with a chocolatey aftertaste.
Pfefferkuchen:
500g (4 cups) flour
375g (1 3/4 cup) sugar
1 package (45g) chocolate pudding mix (to cook, not instant)
1 tbsp Lebkuchengewürz (or pumpkin spice)
1/2 tsp cinnamon
1/2 tsp nutmeg
1 1/2 tsp baking powder
125g (1/2 cup) butter or margarine
125g (1/3 cup) honey
125g (1/2 cup) molasses
2 eggs
Add butter, honey and molasses to a small bowl and microwave until the butter completely melts. In a large mixing bowl, combine all dry ingredients as well as the molasses mixture and eggs. Mix with a sturdy spoon until completely combined. Drop onto lined baking sheet in heaping teaspoons and bake at 350°F or 180°C for about 12-15 minutes or until surface looks cracked.
