2 1/2 c All-purpose flour; sifted 1/2 ts Allspice 1/2 ts Cinnamon 1/2 ts Salt 4 tb Cocoa 2 ts Baking soda 1/2 c Sugar 1 c Brown sugar, packed 1/2 c Butter or margarine 1/2 c Oil 3 Eggs 1/2 c Buttermilk 1 ts Vanilla 2 c Zucchini; grated 1 c Semisweet chocolate chips Recipe by: Louise Stankiewicz Sift together first 6 ingredients & set aside. Cream together sugar, butter & oil; add eggs, buttermilk & vanilla. Mix well. Sift in dry ingredients and mix well. Add zucchini and stir until blended. Pour into greased & floured 9 x 13 pan & sprinkle chocolate chips over top. Bake at 350 for 45 min. Louise's note on this recipe: "This cake will melt any man's heart!" -----

Definitely the EASIEST, most versatile chocolate pumpkin pudding recipe ever! You can make it totally fat-free, sugar-free and guilt free if you want, OR, you can LOAD up and add fats and sugars, to make it more satisfying. It's totally up to you. The basic recipe is SO easy and then you can add to YOUR liking and taste. The great thing is that you get to enjoy your vegetable but feel like you are having dessert.
Louise's Chocolate Pumpkin Pudding: Base Recipe: 350g diced pumpkin, cooked any way you like to cook it. I boil it. 2 heaped tablespoons of cocoa powder Pinch of salt Sweetener of YOUR choice (artificial sweetener, xylitol, honey, sugar, stevia...)
Method: drain water from cooked pumpkin. Combine all the above ingredients in a blender or mash with fork, and there you have it. Can be eaten hot or cold. Freezes well.
Optional extras: Cinnamon Vanilla Essence Turmeric Nut butters or fats Butter or cream Any other flavoring or spice that YOU desire.
