Roll out on a floured surface to a thickness of about 1/8 to 1/4 inch. Cut with the cookie cutters of your choice (this was always a cause for argument in our family). Bake on ungreased cookie sheets until tan around the edges, about 8-10 minutes. Allow to cool. Make the frosting by beating together the sugar, milk and vanilla until smooth. Divide and color each portion. Frost the cookies. Cinnamon Stars Zimtsterne Christmas Cookies
Cinnamon Stars “Zimtsterne”
Recipe for 1 baking tray / about 21 pcs
(403kcal/100g)
Ingredients:
1 ½ bags almonds (300g)
1 cup Icing sugar (200g)
4 tsp cinnamon powder (10g)
½ lemon (skin and juice) (63g)
2x egg white (72g)
Some sugar to roll out the dough.
Preparation method:
- Beat up the egg white in a very clean bowl with a whisk.
- Add the icing sugar gradually to the egg white once it is almost stiff.
- Remove 4 tbsp of the mixture for later.
- Force the almonds through a fine grater / food processor into a bowl.
- Add the egg white/icing sugar mix and the cinnamon to the ground almonds.
- Rub off the peel of the lemon and add it to the rest.
- Press out the juice of the lemon and add it as well.
- Mix everything with your hands until you have a compact dough, don’t knead to long.
- Add some sugar on to your working surface, put the dough on it and put some
sugar on the dough.
Spread out the dough with a rolling pin until it is about as thick as your little finger.
- Cut out the cookies with your biscuit cutters and put them on a baking tray with baking paper.
- Knead the leftovers together and repeat the rolling out / cutting until all dough is used.
- Spread out the egg white / icing sugar mixture from earlier on the cookies with the help of the back side of a tablespoon.
- Bake the cookies at 130°C for 15 minutes.
- Remove the cookies from the tray after the baking and put them on a cooling rack.
Notice:
- These cookies shouldn’t be baked too hot! Otherwise the Icing will go brown.
This is a traditional Christmas cookie recipe which is baked all over Switzerland for Christmas.
Preparation time: 30min
Cooking time: 15min
Start to Finish: 1h
Shelf life:
- You can keep these cookies in a tin for about 3-4 weeks, notice that you have to work very clean and the tin should also be very clean, otherwise the cookies will grow mould.
- The better choice would be to freeze them in an airtight bag and defrost them 2h before consumption. You can keep the cookies in the freezer for at least 3 months and they will taste still very fresh after defrosting.
The grater I use is not available in the US, but this grater will do the same job just as fine:
In the UK there is a other version of the grater I use available which I recommend:

Yields: 6
Ingredients For Joulutorttu (Finnish Christmas Tarts)
☛ Ready made puff pastry sheets or pie dough(300 g)
☛ Egg wash (1 egg, lightly beaten) or melted butter
☛ 1/2 cup baking-proof plum jam/marmalade, for filling
☛ Powdered sugar for dusting finished tarts
How to Make Joulutorttu (Finnish Christmas Tarts)
1. Preheat your oven to 430°F/225°C . If using frozen pastry sheets, then thaw them at room temperature for 30 minutes. Then cut the each rectangle sheet into 3-inch squares.
2. To make the traditional Finnish torttu (pinwheel/star) shape, use a sharp knife to make diagonal cuts in the corners of the squares towards the center of the tart (about halfway towards the center).
3. Lift every other split corner up and pinch them down in the middle, pressing into the centre with moistened fingers. Make more pinwheels with the remaining squares. Place 1 teaspoon of jam in the center of the square. Repeat the same with all squares.
4. Transfer your pinwheel shaped tarts to a parchment lined baking sheet, placing the tarts at least 1 inch apart.
5. Lightly brush the tops of the tarts with the egg wash (beaten egg) or melted butter to moisten the corners.
6. Let them cool on the baking sheet for 5 minutes. Once the tarts are cooled, dust them lightly with sugar. Optional step: Top the centers with 1 teaspoon jam.
7. Enjoy the tarts immediately. Store the tarts in an air-tight container in the refrigerator for up to 3-4 days.

How To Bake Traditional German Christmas Cookies | Easy Christmas Cookie Recipe
Baking cookies is one of the most popular Christmas traditions in Germany and other European countries. The ritual of baking during Advent dates back to the Middle Ages, when spices from the Orient found their way to Europe. In Austria especially, people developed many different types of tasty cookies in the 19th century, such as the famous “Vanillekipferl” or the well-known “Spitzbuben”.
To this day, the ritual of baking cookies together at Christmas time has remained. The top selling German Christmas-related products are cookie cutters, vanilla crescents and cinnamon stars.
We invited Susi Carreira and Katja Stieber who run a baking blog called “Küchen-Miezen” to teach you how to make the classic German “Plätzchen”.
