How To make Cincinnati 5 Way Chili
2 tb Butter
2 lb Ground beef
6 Bay leaves
1 lg Onion; finely chopped
6 md Garlic cloves
- finely chopped 1 ts Cinnamon
2 ts Allspice
4 ts Vinegar
1 ts Dried whole red pepper
-(crushed) 1 1/2 ts Salt
2 ts Pure ground red chile
1 ts Ground cumin
1/2 ts Dried oregano
-(preferably Mexican) 6 oz Tomato paste
6 c Water
16 oz Kidney beans; drained
1/2 lb Vermicelli; cooked
1/2 c Cheddar cheese, grated
1 sm Onion; finely chopped
HEAT THE BUTTER IN A LARGE HEAVY SKILLET over medium-high heat. Add the meat to the skillet. Break up any lumps with a fork and cook, stirring occasionally, until the meat is evenly browned. Stir in all the remaining ingredients up through the water. Taste and adjust seasonings. If the flavor is too sweet, add a small amount of vinegar; if not spicy enough, add a small amount of ground chile. Bring the mixture to a boil, then lower the heat and simmer, uncovered, for 2 to 4 hours. Add the kidney beans to the mixture 1/2 hour before serving. Place a small amount of the cooked vermicelli in individual bowls. Spoon on a generous amount of chili. Top with grated cheese and raw onion or pass in individual bowls.

Cincinnati Chili Recipe - I'd like a 5-way, please!
Cincinnati Chili Recipe - Chili is a dish that has literally 100’s of different recipes. They vary by region, ethnicity, chili color, ingredients, and intangibles such as what to serve with your favorite type of chili. There are multiple Chili cook-offs in every city every year. Nothing says comfort food in the US more than Chili.
One of the most unique types of Chili is Cincinnati-style Chili. For those who grew up in Cincinnati or lived there for any significant length of time, you can’t help but take sides in the Skyline Chili ( vs Gold Star Chili ( debate. There are as many Skyline/Gold Star locations in Cincinnati as there are McDonald’s. They all have a drive-thru, just like McDonald’s.
This is not a true Cincinnati chili recipe because 1) I use ground Turkey and 2) I don't boil the meat. But the flavor palate is there. So if you can't get to a drive-thru in Cincinnati, try this recipe for a tasty alternative to Cincinnati Chili.

Instant Pot Cincinnati/Skyline Chili (copycat recipe)
Instant Pot Cincinnati/Skyline Chili is a copycat recipe that is quick and easy to make in the instant pot. You can eat it as 3 way chili, 4 way by adding beans, or 5 way by adding onions on top. You put it over spaghetti noodles or on a hotdog to make chili dogs or coney dogs. This is an awesome recipe sure to please your taste buds.
Cincinnati Chili
2 Pounds 93% ground sirloin (raw)
1 Quart + 1 Cup tomato juice (5 cups)
1 Teaspoon cinnamon
1 Large peeled whole onion (I used a large diced onion)
2 Dashes Worcestershire sauce
1/8 Teaspoon. garlic powder
1 Teaspoon allspice
4 Tablespoons chili powder
1 Teaspoon pepper
1 Tablespoon salt
1 Teaspoon vinegar
5 Bay leaves
1 Teaspoon cumin
Combine all ingredients in the instant pot. Stir to make sure it is evenly combined.
I add the bay leaves after I stir, it's easier to mix it well. Add the onion last if you are going to use a whole onion.
Make sure to break up the meat as you mix.
Cook on manual high or pressure cook high for 12 minutes and allow it to do a self release. It took about 18 minutes to self release.
Remove onion (if you used a whole one) and bay leaves.
May be served over spaghetti noodles and sprinkled with shredded sharp Cheddar Cheese. Add what ever you like. Beans, chopped onions, etc.. Can also be served over Hot dogs on bun for Coney Islands.
