36 Cherrystone Clams
1/2 lb Butter, Room Temperature
1/4 c Chopped Shallots
1 tb Chopped Garlic
1/2 ts Tabasco Pepper Sauce
1 tb Worcestershire Sauce
1 tb Dijon Mustard
2 tb Chopped Fresh Parsley
2 tb Chopped Fresh Basil Leaves
Salt To Taste Pepper To Taste
When renowned chef Pierre Franey visited Avery Island, he observed some age-old local commercial enterprises ~ crawfish farming, oyster shucking and boudin making ~ with great curiosity and enthusiasm. Preheat the broiler. Open the clams and arrange them neatly on half shells on a baking sheet. In a small bowl, cream the butter with the remaining ingredients. Tips ;
— Kalau guna salted butter takpayah add on salt.
— Cooking cream memang nampak macam dah pekatkan kuah masa awal-awal tu, but lepas masuk clam nanti ada air from clam akan keluar. So, to add in water when necessarily - depends on you liking, nak kepekatan yang macam mana.
— Kalau kurang pedas boleh tambah paprika or chili flakes.
— Sedap makan dengan Mantao or garlic bread, dengan nasi pon okay.
— Selain clam bole juga guna udang, squid, chicken, mussels, whatever you like yaa.

Simmered in our popular Pick of the Vine Ambervale Chardonnay and seasoned with fresh lemon zest and red pepper flakes, this flavorful dish is best enjoyed with a crusty bread for dipping.
Garlic Butter Clams
Serves: 4
Ingredients
3 Tbsp. unsalted butter
1 shallot, peeled and small diced
3 garlic cloves, finely minced
1 cup Ambervale Chardonnay
1 cup clam juice
48 fresh clams,scrubbed
½ cup heavy whipping cream
Crushed pepper flakes, to taste
Chopped fresh parsley, for garnish
Salt and pepper, to taste
Crusty bread, for serving
Instructions
1. Add the butter to a large frying pan over medium heat.
2. Add the shallots and garlic and cook for 3-4 minutes or until lightly browned.
3. Turn the heat to high, add the wine, clam juices, salt and pepper. Bring to a boil.
4. Add the clams and cook for 8-10 minutes or until they are completely opened.
5. Finish with cream, pepper flakes and parsley.
6. Serve with crusty bread.

Especially to the husband who needs to fulfill your wife cravings every month, can try this easy and cheap recipe! You could save your 50bucks!
Ingredients:
1. Clams 500g suitable to eat for 2 (Or any protein that you like eg: Chicken, prawn etc)
2. Garlic - chopped or minced (around 4-5 cloves for 500g)
3. Curry leaves
4. Cooking cream (or you can use fresh milk as well)
5. Paprika
6. Chilli Flakes
7. Black pepper
8. Parsley (optional)
9. Butter ( I used salted one)
Recipes:
1. Put butter into the pan. Then put garlic, Chilli flakes and curry leaves. Fry until garlic turns brownish
2. Pour cooking cream.
3. Then add Paprika, Black Pepper and chicken stock/prawn stock/any cube that you like
4. Then add salt and a bit of brown sugar
5. Add your clams (or any protein that you like)
5. Then its done!
