How To make Coconut Molasses Muffins
2 c AM Whole Wheat Flour
2 ts Non-alum baking powder
1/2 ts Sea salt (optional)
1/2 ts Ginger
1 c Flaked unsweetened coconut
1/4 c AM Unrefined Vegetable Oil
1 Egg or egg replacer
2/3 c Buttermilk
1/2 c Unsulphured molasses
-OR- honey 1 ts Pure vanilla
In mixing bowl stir together flour, baking powder, salt, ginger and coconut. Mix liquid ingredients and add to the dry mixture until moistened. Fill well-greased muffin tins 2/3 full. Bake at 350 F. for 20-25 minutes.

Apple Crumb Molasses Muffins (Oil and Granulated Sugar-Free)
These muffins are very hearty and yummy with all the flavors of apple, molasses and cinnamon wrapped into one like a apple coffee cake. Recipe here, don't forget to subscribe for more!
Makes 6-8 muffins
INGREDIENTS
1 cup Oat flour
3/4 cup of Spelt flour (or you can use additional oat flour or all purpose flour or whole wheat pastry flour should work as well)
1/3 cup maple syrup (if you like it sweetner you can add a TBSP or so more)
½ cup of applesauce
1 small shredded apple (optional, but these r applecumb muffins)
¼ cup molasses
1 tsp vanilla extract
¼ cup tapioca starch (or corn starch non gmo)
1 tsp baking powder
1 tsp cinnamon
½ tsp nutmeg
Crumb Topping
1 cup almond flour
3 tbsp. maple syrup
1 tsp cinnamon
Optional Glaze (2 options Sugar and Sugar Free):
Sugar-Free Cashew Vanilla Frosting (WFPB Option)
1 1/2 cups raw cashew pieces
4-6 medjool dates, pitted
1/4 to a 3/4 cup plant milk (1/4 for very thick frosting,1/2 for semi thick)
1 tsp vanilla extract non-alcoholic or vanilla powder or vanilla bean
1/2 tsp of allspice
1-2 TBP of apple juice (optional)
In a blender or food processor blend everything together until smooth.
Vanilla Glaze (Option #2 Plant-based)
1 cup organic powdered sugar
2 Tablespoons apple juice
1 teaspoon vanilla
In a small bowl, combine powdered sugar, milk, and vanilla. Mix to a smooth, thick consistency. Add more milk to thin, if necessary. Drizzle glaze over warm turnovers and serve.
Bake muffins for 25 mins at 350F.
Remove from the oven and allow to cool completely before frosting. Enjoy!

INGREDIENTS
* 2 1/4 (250 g) cups oat flour
* 2 eggs
* 1 cup (245 g) Plain Yogurt
* 1/2 cup (123 g) milk of choice
* 5 tbsp (70 g) melted butter or any oil
* 1/2 cup (110 g) brown sugar or coconut sugar
* 1 ½ tsp baking powder
* 1 tsp vanilla
* 1/4 tsp salt
* 1/2 cup Raisins or any dried fruits
INSTRUCTIONS
1. Preheat oven to 425°F (218°C). Generously grease a muffin pan with butter or nonstick spray, or line with muffin liners. Set aside.
2. Whisk together eggs and brown sugar, then mix in yogurt, milk, melted butter, salt and vanilla extract. Mix until smooth.
3. In a separate bowl, whisk together oat flour and baking powder
4. Combine wet and dry ingredients and mix until no clumps remain.
5. Fold in raisins. Let sit the batter about 5 minutes.
6. ~3/4 to the top. Sprinkle a sugar on each (optional).
7. Bake at 425°F for 5 minutes, then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C) and continue to bake for 20-25 minutes or until the tops are lightly golden brown and centers are set. Stick a toothpick in the center of a muffin to test for doneness. If it comes out clean, the muffins are done.
8. Let cool & enjoy!

Time for another Mindful Bake, and this week Sally is going back to basics again with this Mindful Muffins recipe. This Muffin recipe is by far the best you'll ever find, it uses Olive Oil to add richness and flavour to the sponge so no more bland boring Muffins for you! It's simple, quick and doesn't use any fancy equipment so you can enjoy making them with zero stress! Plus the chances are you have all the ingredients that you need already!

Preheat Oven to 170C (fan assisted)
250g Caster Sugar
Zest of 2 Lemons
3 Large Eggs
250ml Whole Milk
250ml Light Olive Oil
375g Plain Flour
2 tsp Baking Powder
1/4 tsp Salt
100g Fresh Raspberries
100g White Chocolate Chips
Try mixing up your flavours:
Lemon and Blueberry
- Add 100g or fresh or frozen Blueberries
Chocolate and Orange
- Switch out the Lemon Zest for Orange Zest
- Add 100g whatever chocolate chips you like
Cinnamon Apple and Pecan
- Add 1 tsp Ground Cinnamon
- Chop up 1 Small Apple into cm diced
- Add 100g chopped Pecans
