The first edition of the Galt Cookbook published in 1892, is a great look into what was happening in Southern Ontario and Canadian Cooking in this time period. It is a community cookbook and gathered recipes from people who both lived in rural settings and in the larger cities and towns. Coffee Cake

Three coffee-cupfuls milk slightly warm, one coffee-cupful butter, melt the butter in the milk, one coffee-cupful sugar, two cakes Fleischmann’s yeast, one teacupful stoned raisins. Make a sponge in the evening, let it rise overnight: in the morning stiffen with flour and knead about half an hour. When risen again roll out an inch thick and put in pans, then when light melt butter and thicken with flour and spread on cakes. Bake. Before serving sprinkle with cinnamon and sugar.

INGREDIENTS:
●2-1/2 to 3 cups all-purpose flour
●1/4 cup sugar
●1 package (1/4 ounce) active dry yeast
●1 teaspoon salt
●1/2 cup water
●1/2 cup 2% milk
●1/2 cup butter, cubed
●2 eggs
●1 can (21 ounces) cherry pie filling
●GLAZE:
●1/2 cup confectioners' sugar
●1/4 teaspoon almond extract
●3 to 4 teaspoons 2% milk
Polish Yeast Cake with Crunchy Crumble | Ciasto drożdżowe | Drozdzowiec z Kruszonka
This is a recipe for polish yeast cake (drozdzowiec - ciasto drożdżowe in Polish) that my grandmother used to make for me very often. I make it with fresh yeast but you can use dry yeast as well. Polish yeast cake is not as sweet as cakes you may be accustomed to, you may even want to call it sweet yeast bread ;) Good news is: you can always adjust sugar amount without suffering consequences as the texture will remain intact in this recipe.
Ingredients
- 450 - 500 g all purpose flour (about 4 cups)
- 50 g (1.8 oz) fresh yeast or 16 g dry active yeast
- one large whole egg and 2 egg yolks (or 2 whole eggs)
- 125 g (1.5 oz) sugar
- 260 g (9 oz) warm milk (I used 2% fat milk)
- 85 g (3 oz or 6 tbs) melted butter
FOR THE CRUMBLE
- 40 g (1.5 oz or 3 tbs) soften butter
- 41 g or 0.5 cup old fashioned oats
- 60 g or 0.5 cup all purpose flour
- 40 g or 1.5 oz of sugar

Plum Yeast Cake recipe by Master Baker
This is a simple but delicious fluffy plum yeast cake. The dough is made super fast, just cutting the plums takes some time - but it's worth it! It's topped with almonds and a nice buttery cinnamon crumble. The plum cake is a perfect coffee cake and goes best with whipped cream or ice cream:)
Recipe for a 11x15inch pan
1.Dough
-375g all purpose flour
-150g warm milk
-45g sugar
-20g yeast
-45g unsalted butter
-1 medium egg
-zest of 1 lemon
-10g vanilla extract
-1g cardamom
-6g salt
-75g ground dry biscuit (prevents the dough from getting soggy from the fruit juice)
2.Crumble
-100g sugar
-100g unsalted butter
-200g cake flour
-pinch of salt
-5g vanilla extract
-1/2 tsp cinnamon
3.Topping
-80g sugar + 1tsp cinnamon
-40g blanched almond pieces
4. Fresh plums 4.4lbs (2kg) - cut in quarters
