Quick and Easy Super Coffee Muffins Recipe!
These delightful coffee muffins are perfect for coffee lovers. With a rich coffee flavor and a hint of sweetness, they make a great treat to accompany your morning cup of joe or as an indulgent snack any time of the day.
To make these coffee muffins, you'll start by preheating your oven to 180°C (350°F).
ingredients:
2 eggs
65 g (1/3 cup) brown sugar
85 ml (1/3 cup) hot milk
5 g (1 teaspoon) instant coffee
85 g (6 tablespoons) melted butter
210 g (1 3/4 cups) all-purpose flour
6 g (1 1/2 teaspoons) baking powder
1/4 teaspoon salt
80 g (1/2 cup) chocolate chips
Additional brown sugar and chocolate chips for topping
In a mixing bowl, beat the eggs and brown sugar together until well combined. This will help create a light and fluffy texture in the muffins.
Then stir the instant coffee into the hot milk to dissolve it, then add the coffee to the muffin batter.
Pour in the melted butter and mix until incorporated. Gradually add the all-purpose flour, baking powder, and salt, stirring until the dry ingredients are fully combined with the wet mixture. Be careful not to overmix.
Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
Line a muffin tin with paper liners or grease the cups with butter or cooking spray. Fill each cup about two-thirds full with the muffin batter. If desired, sprinkle some brown sugar and additional chocolate chips on top of each muffin for extra flavor and visual appeal.
Place the muffin tin in the preheated oven and bake for approximately 30 minutes or until a toothpick inserted into the center of a muffin comes out clean. The muffins will have a golden brown color and a delicious aroma.
Once baked, remove the muffins from the oven and allow them to cool in the tin for a few minutes. Transfer them to a wire rack to cool completely before enjoying. These coffee muffins are best served slightly warm or at room temperature.
The combination of the robust coffee flavor, the sweetness of brown sugar, and the delightful bursts of chocolate chips make these coffee muffins a delectable treat that is sure to satisfy your cravings. Enjoy them with a hot cup of coffee or as a delightful snack anytime you need a pick-me-up!
