Black Bean and Corn Salad Recipe!
I love making this simple black bean and corn salad during the summer months as it's both refreshing and savory and super easy to prepare. You can also serve it as a salsa by digging in with chips or tostadas. Never forget to pair it with a chardonnay or rosé.
Black Bean and Corn Salad

Serves 6 to 8
Cook Time: 15 minutes
• 2 (15-ounce) cans black beans, rinsed and drained
• 1 ½ cups of fresh or frozen corn
• 2 tomatoes, chopped
• 1 red bell pepper, seeded and chopped
• ½ small red or white onion, chopped
• 1 jalapeño, finely chopped
• 1 serrano pepper, finely chopped
• ½ cup chopped fresh cilantro
• ¼ cup fresh lime juice
• 1 tbsp olive oil
• 2 tbsp pickled jalapeño peppers vinegar
• 1 tsp ground cumin
• 2 garlic cloves, minced
• Salt and freshly ground black pepper
In a medium bowl, combine black beans, corn, tomato, bell pepper, onion, jalapeño pepper, serrano pepper and cilantro. In a separate bowl, combine lime juice, oil, cumin, minced garlic and jalapeño vinegar – drizzle over bean mixture and mix well. Season with salt and pepper and serve over a bed of arugula, with tortilla chips or as a side dish.

NAVAJO GRANDMA'S BLACK BEAN AND CORN SALAD INGREDIENTS:
MIX IN A MEDIUM BOWL:
1 Cup corn
1 (15 oz) can Black Beans, drained, rinsed
2 Roma Tomatoes, diced
1 Red Bell Pepper, diced
1-2 Large Avocado, diced
1/2 small red onion, diced or minced
1/2 Cup freshly chopped Cilantro
WHISK THE FOLLOWING IN A SMALL BOWL:
1/4 Cup Lime juice (2 limes) 6 tsp
1/4 Cup Extra Virgin Olive Oil, 6 tsp
1 Clove Garlic, minced
1/2 teaspoon salt
1/2 teaspoon Red Pepper flakes
Pour over and mix into fresh black bean/corn salad
Serve with Naneeskadi (frybread dough baked in a skillet or grilled)
Serve fresh, ENJOY!!!
Black Bean Salad with Sweet Potato

⭐️ Ingredients
FOR THE SALAD
1 cup (180 grams) cooked black beans
1½ pound (680 grams) sweet potatoes peeled and chopped into 1-Inch cubes
1 cup (120 grams) green bell pepper diced
1 medium avocado diced
½ cup (100 grams) corn
½ red onion chopped
¼ cup pickled jalapeños chopped
FOR THE CILANTRO LIME DRESSING
1 cup packed (25 grams) cilantro
⅓ cup (72 grams) extra virgin olive oil
¼ cup (60 grams) lime juice
2 tablespoons (30 grams) maple syrup
½ clove garlic
½ teaspoon grated ginger
½ teaspoon salt

1 400g can corn kernels, rinsed
1/2 cup cherry tomatoes, chopped
1/2 green bell pepper, chopped
1/2 red pepper, chopped
1/2 cup red onion, chopped
1 avocado, cut in cubed shape
1/2 cup cilantro, chopped
1/2 jalapeno, minced
Dressing:
2 tbsp olive oil
1 garlic clove, minced
1/2 tsp red chili flakes
1/2 tsp salt or as required
