Cowboy caviar, also known as Texas caviar, is not just another salsa recipe! It's brimming with color, texture, and flavor from an array of fresh vegetables, and full of protein from both black-eyed peas and black beans. It can be whipped up and gobbled up in just 15 minutes, or you can make it ahead of time to give all those delicious flavors a chance to meld. Call it a salsa, a salad, an appetizer, or a vegetable side dish—it's the perfect year-round potluck dish that will make everyone giddy up and eat!
Is cowboy caviar a salad or dip?
Salad is a loose term—just take strawberry pretzel salad for example! Cowboy caviar is whatever you want to make it. Scoop it up with tortilla chips as a chunky, fresh party dip, or spoon some on your picnic plate with barbecue and baked beans. No matter how you categorize it, it's darn delicious!
What is cowboy caviar made of?
Everyone has their own take on Texas or cowboy caviar. For this recipe, we use a mix of black beans and black-eyed peas for color and flavor. Tomatoes, bell pepper, onion and sometimes even corn are commonly added. Jalapeño pepper adds spice while cilantro keeps things fresh. We've dressed it with red wine vinegar, olive oil and added a little Worcestershire sauce for saltiness and depth. Some recipes use bottled Italian salad dressing. When going that route, substitute about 1/3 cup of dressing in place of the olive oil, vinegar, and Worcestershire and decrease the salt and pepper slightly.
Do you use canned beans and peas for cowboy caviar?
Canned black beans and black-eyed peas make this dish super easy. All you have to do is crack open the cans, drain and rinse, and toss the beans and peas into the bowl, no cooking required! However, if you have a pot of black-eyed peas leftover from Sunday lunch, this is a great way to use 'em up! Feel free to start with fresh or dried beans and peas and cook them yourself for cowboy caviar, but don't shy away from canned goods either.
What does cowboy caviar taste like?
Like a cross between pico de gallo and black bean salsa, cowboy caviar is bright, fresh and full of crunch. Eat it with chips or serve it as a side dish on a summer cookout menu.
Is cowboy caviar spicy?
This is up to you! This recipe calls for one chopped jalapeño, which when leaving the seeds and white flesh intact, adds a little spice to the dish. If you like it just a little spicy, remove the seeds. Don't like spice at all? Skip the jalapeño completely.
How long does cowboy caviar last in the refrigerator?
Cowboy caviar can be made up to two days in advance and refrigerated until ready to serve. It is fine to hold even longer, but the vegetables will start to lose their crunch. Pro tip: Add the cilantro right before serving in order to keep it bright and fresh.

Ingredients
1 15-oz. can black eyed peas, drained and rinsed.
1 15-oz. can black beans, drained and rinsed.
1 1/2 c. diced roma tomatoes.
1 jalapeño pepper, chopped.
1 yellow bell pepper, chopped.
1/2 c. red onion, chopped.
1/4 c. chopped cilantro.
3 tbsp. olive oil
1 tbsp. Worcestershire sauce
1/2 tsp. seasoned salt
1/2 tsp. ground cumin
1/2 tsp. ground black pepper
Tortilla chips, to serve.

In a large mixing bowl, combine the black-eyed peas, black beans, tomato, bell pepper, red onion, jalapeño, cilantro, olive oil, vinegar, Worcestershire sauce, seasoned salt, cumin, and black pepper. Mix well to combine. Serve with tortilla chips.

Cowboy caviar or Texas caviar is an amazing, delicious, and really easy dish that works as a dip, side dish or just eat it as a salad! No cooking needed, loaded with vegetable and dressed with a mouthwatering and fresh vinaigrette.
INGREDIENTS
Vinaigrette Ingredients
• 1/4 cup olive oil
• 3 tbsp red wine vinegar
• 2 limes, juiced
• 2 tsp low sodium soy sauce
• 2 tbsp frozen orange juice concentrate
• 1 tbsp garlic chili paste
• 2 cloves garlic, finely shredded
• 1 tbsp Chef Ange Base Seasoning -
• 1 tsp smoked paprika
• 1 tsp ancho chili powder
• 1 tbsp dijon mustard
• 1 red bell pepper, small dice
• 1/2 red onion, small dice
• 4-5 scallions, finely sliced (reserve a little for garnish)
• 1-2 tomatoes, seeds removed and small dice
• 1-2 avocado, small dice
• 1 small bunch cilantro, finely chopped
• 4 oz can, green chilis
• 15 oz can black beans, drained and rinsed
• 15 oz can black eyed peas, drained and rinsed
• 15 oz can sweet corn, drained and rinsed
• Corn tortillas, cut into chip sized triangles

INGREDIENTS
1 can black beans rinsed and drained
1 can black eyed peas rinsed and drained
1 cup tomatoes seeded and finely diced
1 jalapeno seeded and finely diced
1 cup corn can be fresh, canned or thawed from frozen
3/4 cup red and/or orange bell pepper seeded and finely diced
1/2 cup red onion finely diced
1/3 cup olive oil
1/4 cup lime juice
1 tablespoon honey
1 teaspoon chili powder
1 teaspoon cumin
salt and pepper to taste
INSTRUCTIONS
Place the beans, black eyed peas, tomatoes, jalapeno, corn, bell pepper, and onion in a large bowl.
In a small bowl, whisk together the olive oil, lime juice, honey, chili powder, cumin and salt and pepper.
Pour the dressing over the bean mixture and toss gently to coat. Serve as a salad or with chips.
