Preparation time: 35-45 minutes
Ingredients:
8 oz. lump crabmeat
About ½ cup cucumber, peeled, seeded, and diced (1/8” dice)
For the Aioli:
1/2 cup Kraft light mayonnaise (see my Sauces to Die For video on making mayonnaise)
1 avocado, chopped
About 2 Tb. shallots, finely chopped
About 3 large cloves garlic, finely chopped
Juice of ½ lemon
Kosher salt
White pepper, ground
For the Corn Cakes:
1 lb. frozen corn kernels, thawed
1 large egg
5 Tb. flour
About 2 Tb. shallots, finely chopped
About 1 Tb. parsley, chopped
About ¼ tsp. red pepper flakes
2 tsp. brown sugar
Kosher salt
Peppermill
Olive oil
Cracked red pepper
