How To make Crab Cakes Maryland
Ingredients

tablespoon
parsley, chopped, fresh
1
teaspoon
dry mustard
1
teaspoon
worcestershire sauce
1
teaspoon
louisiana hot sauce
2
each
eggs (beaten)
2
tablespoon
mayonnaise
1
pound
cooked crab (flaked)
1/2
cup
cracker crumbs
1
salt, to taste
1
pepper, to taste
1
flour for dredging
Directions:
Mix the parsley, dry mustard, worcestershire sauce and hot sauce, eggs, and
mayonnaise together. Add the crab and crumbs, and season with salt and
pepper to taste. Divide the mixture into 8 cakes and dredge in flour. These
can be deep fried at 375 to 380 deg. for 2-3 min. or until golden brown. Or
you may pan fry them on both sides in butter.

YES, there’s Old Bay and oyster crackers in this recipe. Why people think there’s no Old Bay (I showed a big can of Old Bay as reference) and oyster crackers in this recipe when I literally showed it in this video. And yes, you can use bread crumbs, saltine crackers or white bread soak in a little bit of milk. Use whatever you have. If you’re missing a certain ingredient, don’t let this stop you from cooking. Use what’s available to you.

Now there are many Maryland style crab cakes recipes out there but we prefer our Maryland crab cakes with ritz crackers for that extra butter flavor and crunch. Here's what we used for our jumbo lump crab cake recipe:
1lb Jumbo Lump Crab Meat
1/4lb Backfin Crab Meat
2 Cups Crushed Ritz
2 Eggs
1/2 Cup Mayo
3-4 TBSP Dijon Mustard
3-4 TBSP Worcestershire Sauce
Juice of one Lemon
Parsley
Old Bay Seasoning
When it comes to crab cakes, a lot of people don't let the crab do the talking - but not Rob - his Maryland crab cakes let the crab talk for itself, especially with the added backfin. Now of course, the true star of any self proclaimed Maryland crab cakes recipe or jumbo lump crab cakes recipe is the old bay seasoning. Besides the Maryland crab cakes old bay seasoning, ritz crackers are another huge part of a good crab cake recipe. Don't forget to wilt a little spinach and add some kosher salt and toasted sesame oil for a wonderful compliment. 1 lb Lump and/or Jumbo Lump Crab Meat
1/2 cup mayo
1 egg
1 tbs dijon mustard
1 tsp Worcestershire sauce
1 tsp hot sauce
1 lemon
1 tbs sweet pickle juice
1 pinch of sugar (as needed)
Old Bay (to taste)
chopped parsley
20-25 saltine crackers (crushed into crumbs) - 1 sleeve of crackers
salt & pepper
Bacon, Lettuce, Tomato (optional for slider)
Tartar Sauce:
1/2 cup mayo
1/4 cup sweet relish
1/2 shallot diced
2 tbsp capers (optional)
1 tbsp white sugar
1 lemon
2 tbsps diced parsley
salt and pepper
Directions:
Crush your crackers into bread crumbs. In a large mixing bowl, make your sauce by combining the mayo, worcestershire sauce, hot sauce, lemon juice, sweet pickle juice, dijon mustard, and seasoning. Mix to combine and season to taste. After tasting and adjusting, whisk in 1 egg. Next, fold in your crab meat carefully, so that you do not break apart the large chunks of crab meat. Next, begin to fold in the bread crumbs a little at a time. Once the crab cake mixture holds together, place it in the fridge for 30 minutes.
Next, preheat oven to 450. Add foil to a baking sheet and spray with cooking spray. Melt 1/2 stick of butter in the microwave. Form crab mixture into desired size crab cakes and place on the baking sheet. Top with old bay and place into the oven for 12-15 minutes. Remove from the oven and baste with melted butter. Place under the broiler for 2-5 minutes to finish and brown the top. (Keep an eye on it so it doesn't brown too much)
