How To make Crab Supreme 3
3 tbsp. butter
3 tbsp. flour
1 c. chicken stock
8 oz. Cheddar cheese -- shredded
3 tbsp. cooking sherry
1/2 c. cream
14 oz. can mushrooms
2 c. flaked crab meat
Salt and pepper to taste
Melt butter in top of double boiler over direct heat, stir in flour, gradually add chicken stock and cream. Cook, stirring constant, until mixture is thickened and smooth. Remove from heat and stir over hot water, add cheese and stir until it melts, add mushrooms, sherry and crab meat. Let stand over hot water until serving time. Serve over rice

The easiest part of preparing a crab dish is cooking it. I know some of you may be daunted by the process of mercy killing and cleaning the crabs but it's really not as difficult as it seems. Stir Fried Crab Beehoon (Rice Vermicelli) 干炒螃蟹米粉
Ingredients:
Serves 4 pax

5 cloves of garlic (sliced into thick chunks)
5 shallots (sliced into thick chunks)
3 slices of young ginger
2 cups (500ml or 16.9 fl oz) water
2 tablespoons oyster sauce
0.5 teaspoon sugar
1.2 kg crabs (we used Sri Lankan crab in the video)
150g beehoon (rice vermicelli) - rehydrate by soaking in room temp water for 10 mins
100g Beijing round cabbage
2 tablespoons premium dark soy sauce
A few dashes white pepper
A small handful Chinese coriander
1 stalk spring onion
2 tablespoons Chinese cooking wine

Thai Crab omelette ????
You’ll need
- 5 eggs
- Lump crab meat ????
- scallions
- vegetable oil for fried egg
How
- Beat the eggs and add the crab meat. You can add some salt here or soy sauce if you’d like.
- Heat the wok pan until it’s hot then add the vegetables oil
- Wait for the oil the heat up but it does not necessarily have to be extremely hot. Otherwise the egg will be burnt from the outside and the crab won’t be cooked.
- Slowly cook the omelette on one side, then gently flip/roll the egg so it forms in somewhat roll but not really roll up. You know what I mean ????
- once the outside is golden, remove the omelette and serve with hot jasmine rice + hot sauce

Bak Wan Kepiting Nonya Style Crab Meat Balls is our family's absolute favourite. I always remember when my Grandmother would prepare this dish coming close to the Chinese New Year. A very big pot of at least 200 balls which would feed the entire family for days throughout the Lunar New Year holidays. Today, I still follow that tradition of cooking a big pot which we eat for a few ocassions.
