1 c Crab Meat; Cooked 2 ea Avocados; Peeled & Chopped 2 ea Jalapeno Chiles; * 1/4 c Tomato; Chopped, 1 small 1/4 c Lime Juice 2 tb Olive Or Vegetable Oil 2 tb Onion; Chopped 2 tb Cilantro; Fresh, Snipped 1 ea Clove Garlic; Finely Chopped 3/4 ts Salt 1 x Pepper; Dash Of 1 1/2 c Lettuce; Finely Chopped 1 x Lemon Or Lime Wedges * Jalapeno Chiles should be seeded and finely chopped. ~------------------------------------------------------------------------- Mix all ingredients except lettuce and lime wedges. Place 1/4 cup of lettuce on ead of 6 serving dishes. Divide the crabmeat mixture among the dishes. Garnish with lime wedges.

Crab & Avocado Parfait/Salad
CRAB & AVOCADO PARFAIT/SALAD RECIPE YIELD 2 servings INGREDIENTS 6-8 oz crabmeat, pasteurized preferably 1-2 ripe avocados 1 lime hot sauce of your choice 1 cup finely diced Roma tomatoes or your personal favorite 1/2-1 whole jalapeño, chopped very fine 2-3 tbsp chopped cilantro 2 tbsp green onion, sliced very thin 1 tbsp extra virgin olive oil 2 tbsp mayonnaise 1/4 tsp Old Bay seasoning 2 tsp rice wine vinegar PROCEDURE Need: a wine glass of your choice or other bowl or mold
Cut the avocado into medium dice and place in a bowl. Follow the video to see how I cut the avocado. Squeeze half of the lime over the avocado. Season with a little salt and some hot sauce. Carefully toss.
In another bowl, put the tomatoes, jalapeño, cilantro and green onion. Drizzle in the olive oil and some lime juice from the other half. Season with some salt and pepper.
Put the crab, green onion, Old Bay seasoning, vinegar and mayonnaise. Toss together.
Now for the presentation: Put some avocado mix in the glass, top with some pico de gallo. Do not mix, but instead, you need to make layers. After the pico de gallo, put on some crab mixture. Repeat the layers.
**If you would like to serve this over some greens, use either a plastic or glass bowl. If using plastic, you will need to spray the inside with pan spray. Follow the instructions for the presentation above. Press down slightly then invert onto the greens. You can toss the greens with some extra virgin olive oil, orange zest and juice and a bit of salt and pepper.
