How To make Crisp Cooked Vegetable Appetizer
4 sm Green bell peppers, grilled,
skinned & rinsed 4 ea Tomatoes, skinned & seeded
1/2 lg Spanish onion
2 sm Eggplants, trimmed
4 sm Zucchini, trimmed
Olive oil 2 ea Garlic cloves, chopped
2 ts Sweet red pepper
Salt & black pepper 2 sm Hot red peppers, sliced
:
TO SERVE---------------------------------- Olive oil Lemon juice Lettuce leaves 2 tb Italian parsley, chopped
Seed & core the peppers. Cut peppers, tomatoes & onions into cubes. Cut eggplants & zucchini into 1/2" cubes. Wash, drain & saute in 6 tb olive oil along with the garlic, sweet pepper, salt & black pepper, until slightly softened. Add green peppers & onion & a little more oil if necesary & stir & cook over a low heat until the vegetables are tender but crisp. Add tomatoes hot peppers, toss once & remove pan from heat. Let cool. Sprinkle with olive oil & lemon juice & pile high on the lettuce leaves. Sprinkle each portion with parsley & serve.

These Roasted Garlic Parmesan Potato Wedges take only 15 minutes and are a great snack or side! You can enjoy these with a side dip like the one I made using sour cream OR ketchup! Hope you try this recipe out and enjoy ????
**Potato Wedges**
3 Russet Potatoes
3 tbsps Olive Oil
1½ tsps Oregano
2 tsps Parmesan Cheese
Salt to Taste
1 tsp Paprika
6 Garlic Cloves
Parsley
**Dip**
4 oz Sour Cream
2 tsps Black Pepper
Salt to Taste
1 tsp Paprika
1 tsp Oregano
½ Lemon Juice
METHOD:
1. Wash and cut your russet potatoes into wedges.
2. In a large mixing bowl, place the potatoes and add olive oil, oregano, parmesan cheese, salt, paprika, finely chopped garlic cloves, and finely chopped parsley.
3. Place it in the oven at 350 degrees F for 30 minutes.
4. Then cook it under low broil for 5 minutes on each side.
5. Make the dip using the specified ingredients.
6. Serve and enjoy!

I like to oven bake my potato wedges to make sure they are crispy on the outside and super soft on the inside. For this recipe I've gone with a classic seasoning made with paprika and garlic powder, but the options are really endless! Serve them up all on their own or enjoy with my absolutely delicious chipotle ketchup!!!
