Phở is a famous Vietnamese Noodle dish served with vegetables
INGREDIENTS:
5 lbs (2 1/2 kilos) beef shank (bones with some meat and tendons attached)
1 big red or yellow onion cut in half
6 slices ginger (thumb-sized)
1 tablespoon salt (adjust amount according to taste)
2 tablespoons fish sauce (patis)
water
1 stick cinnamon (3 to 4 inches in length)
1 teaspoon fennel seeds (anis)
3 whole pieces star anise (sanque)
1 1/2 teaspoons coriander seeds
6 to 8 whole cloves
1 tablespoon sugar or a small lump of rock sugar (adjust amount according to taste)
1 package Phở noodles (dried or fresh)
bottom round or sirloin steak, sliced thinly
chopped spring onions
black pepper
GARNISH
spearmint
cilantro
bean sprouts
thai basil
lime wedges
Thai chilies or Sriracha

Silkworms
5,000 years ago, Chinese Empress Xi Ling-Shi discovered silk when a silkworm cocoon dropped into her hot cup of tea, according to folklore. She unwrapped the unusual cocoon and realized, after winding the thread around her finger, what a lovely textile it would create. Thus started the story of one of the most prized fabrics in the world. Silkworms are fried in China and Vietnam, and seasoned and boiled in Korea. In South Korea, large cauldrons of boiling brown silkworm pupae are typical sights on the streets and in outdoor marketplaces.
The odor of steam rising from one of these pots is so distinct that I guarantee you'll never forget it if you ever smell it. There are many reasons why insects are ideal for human consumption. They are high in protein, have a low carbon footprint, and they don’t need to be transported long distances to be slaughtered. Honestly though, I think I’ll pass.
Spinach Noodles
A ribbon pasta created with finely chopped spinach is added to the pasta dough while it is being formed. The noodles are medium to dark green in color and have a little spinach flavor. In size and shape, they resemble medium or wide egg noodles. The amount of freeze-dried spinach added to the noodles is sufficient to turn it green, but that's all. When compared to conventional pasta, there isn't enough to provide any nutritional benefits.
Your choice of refined, whole wheat, green, red, long, short, or bow-tie noodles will have little impact. When you look at this woman preparing the spinach noodles, it almost looks like green clay. Once they are cooked, they look quite appetizing, so this is probably something I would consider trying.
