1 1/2 c AM Whole Wheat Flour
2 ts Non-alum baking powder
1/2 ts Ground ginger
2 Eggs
1 1/2 c Buttermilk; OR...
1 c -{Buttermilk -AND-
1/2 c - Water}
1/4 c Maple syrup or honey
1/4 c AM Unrefined Vegetable Oil
1/2 c Finely chopped pecans
Strawberry-banana sauce
(see recipe below) Plain yogurt :
StrAWBERRY-BANANA SAUCE 1 1/2 c Maple syrup
1 c Sliced bananas
2 c Strawberries

(hulled and halved) Waffle: Combine dry ingredients; stir well. Beat eggs until thick and lemon colored. Add flour mix, buttermilk, syrup and oil. Beat until smooth. Cook on hot, lightly oiled waffle iron, sprinkling the top with chopped pecans before cooking. Serve with topping of the following sauce and plain yogurt. Strawberry-Banana Sauce: Combine all ingredients in a heavy saucepan. Cook over medium high heat 10 minutes, stirring occasionally, serve hot. Do not microwave! Place it in the oven 350 F for 5 minutes. You can also toast it in the toaster; however, sometimes it can dry out the waffles.

In search for the best waffle recipe with the perfect crispness and fluffy-ness, after many tries of different recipes out there, I had finally found the perfect recipe to make the best crispy and fluffy waffle. Made with Breville Smart Waffle Maker.
The secret to extra crispy and fluffy waffle, for every cup of general flour, reduce 1/4 cup of general flour, and replace with 1/4 cup of cornstarch.
Crispy on the outside, fluffy on the inside. Classic.

Recipe (yields 4-5 regular size waffle)
Dry Ingredients
3/4 cup (100g) general / all purpose flour
1/4 cup (30g) cornstarch (key ingredient for the crispness)
1 tablespoon sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon sea salt
Wet Ingredients
1 cup (235ml) milk
80g unsalted butter (melted) - This is the correct amount of butter. In the video I mistakenly stated 70g of butter.
1 large egg
1 teaspoon vanilla extract
Instructions
1) Whisk the flour, cornstarch, sugar, baking powder, baking soda, and sea salt in a mixing bowl.
2) In a separate bowl, whisk the milk, melted butter, egg, and vanilla extract.
3) Add the wet ingredient mixture to the dry ingredient bowl and combine it well. Do not over mix.
4) Let the batter set aside for 10 minutes, so that the baking powder can be fully activated. At the same time, preheat the waffle iron.
5) Once heated, pour the batter into waffle iron and follow it's instruction for done indication.

5 Minute Easy Waffles :
- 25 g Butter (2 tbsp)
- 180g Milk + 1/2 tsp lemon juice ( 3/4 cup milk + 1/2 tsp lemon juice)
- 1 room temp medium Egg
- 150g All Purpose Flour ( 1 cup + 1 tbsp)
- 35 g Sugar (3 tbsp)
- 1/4 tsp Salt
- 1/4 tsp Baking Soda
- 1/2 tsp Baking Powder
Serve with butter and maple syrup!
