Chili Coffee Rubbed Turkey Tenderloin
Ingredients
2 Turkey tenderloins seasoned to your liking and refrigerated for several hours or overnight (I used lawry's pollo asado seasoning, garlic powder, montreal chicken seasoning, onion powder, parsley and chipotle mojo)
¼ cup ground espresso coffee
¼ cup chili powder
¼ cup dark brown sugar
2 Tbsp smoked paprika
2 Tbsp kosher salt
1 Tbsp ground cumin
Instructions
To create the dry rub: In a medium bowl combine coffee, chili powder, dark brown sugar, paprika, salt and cumin. Mix well and set aside.
Remove tenderloins from the refrigerator and coat evenly with the dry rub and place back in the refrigerator for an additional 2 hours or longer. You will notice that the rub takes on a darker form as it sits in the refrigerator and adheres to the meat.
Preheat the oven to 375 and place tenderloins in a casserole dish that has been sprayed with Pam or something similar. Bake for 20 to 30 minutes or until the internal temperature reaches 165 degrees fahrenheit.
Remove from the oven and let rest on a cutting board for about 10 minutes.
Slice to your liking and enjoy!
NOTE: I cooked this dish in a Ninja Foodi 5 in 1 Grill. If by chance you have one or something similar you can set it to bake at 375 and go from there.

Butter Chicken Turkey and Gravy
I love traditional roast turkey and gravy, but I wanted to try something a little more exciting this year, and while the marinade didn’t work out as planned, the butter chicken inspired curry sauce gravy was incredible. Enjoy!
These is no fully formatted, printable, written recipe for this, since the entire recipe didn’t work out, but here are the ingredients in case you want to do the gravy part, which you really should, since it was amazing. Anyway, here you go:
Ingredients for Butter Chicken Roast Turkey
I used a 15 pound bird, which was cooked at 325 F. for 3 1/2 hours.
For the spice rub:
(NOTE: I don’t recommend this marinade. I would add the spices, but not the yogurt or tomato paste into a stick of butter, and use that instead)
1/2 cup plain yogurt
1 tablespoon finely grated ginger
3 tablespoons tomato paste
2 tablespoons garam masala
1 tablespoon smoked paprika
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon kosher salt
2 teaspoons turmeric
1 teaspoon ground coriander
1 teaspoon garlic powder
1/2 teaspoon cayenne
For the curry gravy:
1 stick (4 oz) unsalted butter
1 tablespoon grated ginger
4 cloves crushed garlic
1 tablespoon chili powder
1 tablespoon garam masala
1/4 teaspoon cardamom
pinch ground clove
1 1/2 teaspoon fenugreek powder
1 (28-oz) can crushed tomato
1/2 cup heavy cream
