Quick & Easy Curry Pork Stir-Fry 煮炒咖喱猪肉 Singapore Zichar Recipe
Some of you who aren't local Singaporeans might be wondering what is the meaning of the term Zi Char (sometimes spelt as Zhi Char / Tze char) . For us Singaporeans, almost everyone of us knows what it means. Before I tell you what it means, I shall construct a few sentences here to help you guess what it means. (1) What do you wanna eat? Zi char or Mcdonalds? (2) Which zi char stall is the best in Singapore? (3) Which zi char stall serves the best chilli crabs?
Can you guess what zi char means? Alright, zi char is a hokkien term which literally means cook & fry in Mandarin - it's a term we use to describe a coffeeshop stall that serves freshly cooked dishes and such a stall is usually operated by Chinese .I have no idea how this term came about but I guess in the olden days, zi char stall owners must have said they serve cooked and fried food dishes so over the years, people just affectionately refer to them as Zi Char. So much about zi char but what has it gotta do with our recipe today? That's because this curry pork is a zi char inspired dish - a quick stir fry dish which you can easily whip out at home.

Ingredients:
Serves 4
Marinate meat first for 30 mins with the following ingredients

230g of sliced pork loin
1/2 teaspoon of five spice powder
1.5 teaspoons of meat curry powder
2 teaspoons of cornflour
1/2 teaspoon of baking soda
1/2 teaspoon of salt
A few dashes of white pepper
Let's put the whole dish together

1 tablespoon of cooking oil
10g of chopped ginger
2 pcs of chopped shallots
3 cloves of chopped garlic
2 large sliced red onion
1 tablespoon of meat curry powder
1/2 teaspoon of turmeric powder
1 tablespoon of chilli powder
2 cups of water
1/2 teaspoon of sugar
1/2 teaspoon of salt
1/2 teaspoon of chicken stock powder
Marinated pork
2 stalks of spring onion

Kerala Style Beef Curry - Nadan Beef Curry
Kerala style beef curry recipe
Ingredients
Beef – 1kg
Onion- 3nos
Shallots- 9 or 10 nos
Green chilli – 2 nos
Ginger – 1 nos
Garlic – 6 or7 nos
Tomatoes – 2 nos
Curry leaves – 2 sprigs
Chilli powder – 1 ½ tbsp.
Turmeric powder – ½ tsp
Black pepper powder – 1 bsp
Dry red chilli – 5 or6 nos
Coriander seed – 1 tsp
Fennel seed – 1 tsp
Cardamom – 2 nos
Cinnamon – 1 nos
Coconut slices – 1 cup
Mustard seed – 1 tsp
Salt – 1 or2 tsp
Oil – 3 or4 tbsp
Method
Take a pan add cleaned beef ,chilli powder and turmericpowder mix them well with clean hands
,set aside.
Crush ginger andgarlic into fine paste andset aside.
Again add chopped onion, shallots and green chilli .
Add some amount of crushed ginger garlic paste mix them well.
Pour half cup of water and combine well,
Then cook the beef till they become soften.
Heat a pan add dry red chilli ,coriander seed and small amount of oil ,fry them well and set aside.
Then garam masala like fennel seed ,cardamom,and cinnamon into fine paste and keep aside.
Again grind fried dry red chilli and coriander seed into pine paste keep aside.
Now add some salt into the beef cooking pan, cook them well.
Heat oil in a heavy bottom pan add mustard seed ,lets them crackled .
Add coconut slices saute for 3 to 4 minutes.
Add chopped onion ,shallots,green chilli, ginger garlic paste and tomatoes ,saute them well till they
become soften .
Then add grinded fine paste like garam masala paste and red chilli coriander paste mix and saute
them well.
Add cooked beef ,salt and water combine them well and cook for 6 to 7 minutes.
Finally add some curry leaves and black pepper powder mixandcook for few minutes.
Remove from fire and keep aside.
Serve and enjoy kerala style beef curry with tapioca

Chinese Takeaway Style Curry Sauce w Meatballs
This Chinese curry sauce with juicy meatballs makes a great, comforting dinner.
The Chinese takeaway style curry sauce works so well with chicken, minced beef but my personal favourite is these homemade meatballs.
This recipe was handed down to me by my Dad, I remember eating it loads when growing up. that sauce has got a rich, savoury tang to it, and it tastes so comforting and filling that you just don't want dinner to end!

Ingredients:
For the meatballs:
▢500 g (1.1 lb) minced beef
▢1 tbsp soy sauce
▢pinch of black pepper
▢1 tsp minced ginger
▢1 clove garlic - peeled and minced
▢2 spring onions (scallions) - finely chopped
▢1 large egg
▢3 tbsp freshly grated breadcrumbs or panko
Chinese Takeaway Style Curry Sauce:
▢1 tbsp sunflower oil
▢1 ½ tsp turmeric
▢½ tsp Chinese 5 spice
▢1 tbsp mild curry powder
▢2 cloves garlic - peeled and minced
▢210 ml (little under a cup) chicken stock
▢210 ml (little under a cup) beef stock
▢210 ml (little under a cup) whole milk
▢1 onion - peeled and cut into large squares
▢1 red bell pepper - chopped into large chunks
▢2 tsp sugar (granulated/caster or light brown)
▢2 tsp Lime juice
▢1 tbsp Cornflour (Cornstarch)
▢2 tbsp Cold water
To Serve:
▢Boiled rice
▢5 soft boiled eggs
▢Fresh coriander
▢Chilli flakes
▢Warm pitta breads
INSTRUCTIONS
1. Add all of the meatball ingredients to a large bowl and mix together until just combined.
2. Form into walnut-sized balls (you should get 20-22).
3. Heat the oil in a large frying pan (skillet).
4. Place the meatballs in the pan and cook on a medium-high heat, turning regularly (turn carefully, using tongs to prevent the meatballs breaking) until browned all over - this should take about 6-8 minutes.
5. Remove the meatballs from the pan and place on a warm plate whilst we make the Chinese takeaway style curry sauce.
6. Add the turmeric, five-spice, curry powder and garlic to the pan with the meatballs, and cook for a further 2-3 minutes, until the spices start to release their fragrance.
7. Add the chicken and beef stocks and milk to the pan.
8. Stir everything together then add the meatballs back into the pan.
9. Bring to the boil, then turn down the heat and simmer for 10 minutes, turning the meatballs occasionally.
10. Add the chunks of onion and red pepper, simmer for a further 5 minutes (you want them to be warmed through, but to still retain their crunch).
11. Stir through half the sugar and half the lime juice, then taste and add more if needed.
12. Stir in the cornflour slurry (1 tbsp of cornflour/cornstarch + 2 tbsp of water). Taste and add additional lime juice or sugar to your taste.
13. Serve the curry with boiled rice (or cauliflower/broccoli rice*) and hard or soft boiled eggs**. Top with fresh coriander and chilli flakes. You could also serve with warm pitta bread if you like.

*Ingredients **steps:
*1 kg beef
Do the following for marination
*1/2 tsp turmeric powder
*1 tsp salt
*a few curry leaves
*1 tbsp yoghurt
*1 tsp chilli powder
**mix well
**keep aside for 30 minutes
**to a hot pan, add some coconut oil
*1 tsp cumin seeds
*1 tsp fennel seeds
*3-4 green chilliies
*a few curry leaves
*add grind/crushed paste (ginger & garlic as shown in video)
*2-3 onion chopped
**saute until brown
*add some salt
*1/2 tsp turmeric powder
*3 tsp chilli powder
*4 tsp coriander powder
*1 tsp garam masala
*1/2 tsp pepper powder
*saute for 1 minute until raw smell fades
*add some water
**saute until oil oozes out
*add 1 tomato chopped
**cover and cook until tomatoes are soft
**add the marinated beef
**mix well
**cover and cook for 20 minutes in medium heat stirring occationally
**cover and cook for 10 minutes in low heat
*add 2 chopped potatoes
*add some water
*salt as required
*1 cup coconut milk
*cover and cook for 7-8 minutes in low heat
**if requried, add some more water for more gravy
*1/2 tsp pepper powder
*1/2 tsp garam masala
*cook for 1 more minute
*turn off the heat
*garnish with coriander and curry leaves
*add 1/2 tsp coconut oil
