A quick and simple mild chicken curry recipe with bags of flavour. Ready in 30 minutes, it makes a great go-to mid-week meal for the whole family.

Ingredients for the chicken curry:
2 tbsp vegetable oil
3 chicken breasts - - (approx 500g/17.5 oz) chopped into bite-size chunks
1 large onion - (or 2 small) peeled and finely chopped
2 cloves garlic - minced
2 tsp minced ginger
2 tbsp mild curry powder- go hotter if you prefer
1 tbsp ground coriander
½ tbsp ground cumin
1 tsp paprika
½ tsp ground cinnamon
1/2 tsp salt
½ tsp black pepper
2 tbsp tomato puree/paste
14 oz (400g) tin finely chopped tomatoes
1 cup (240ml) chicken stock
14 oz (400ml) tin full fat coconut milk
1 tbsp cornflour mixed with 2 tbsp cold water to make a slurry - *optional*
2 packed cups (60g) baby spinach
To Serve:
Boiled rice
Fresh coriander
Chilli flakes

Here is what you'll need!
Simple Veggie Curry
Serves: 4
INGREDIENTS
2 tablespoons salt, for water
2 pounds potatoes, cut to 1-inch cubes
1 tablespoon vegetable oil
1 medium onion, diced
4 cloves garlic, minced
2 teaspoons cumin
1 teaspoon cayenne
4 teaspoons curry powder
1 teaspoon salt
1 teaspoon black pepper
1-inch piece of ginger, minced
1 14-ounce can diced tomatoes
1 15-ounce can chickpeas, drained
1 15-ounce can peas, drained
1 14-ounce can coconut milk
PREPARATION
Place potatoes into a large pot or dutch oven and cover with well-salted water. Bring to a boil, then reduce heat to a simmer, cover and let the potatoes cook until fork tender–about 12 minutes. Once cooked, drain the potatoes and set them aside.
Return the pot to the stove and add 1 tablespoon of oil. Add onion and garlic and sauté over medium heat until onion is tender and starts to turn translucent, about 3-5 minutes.
Add cumin, cayenne, curry powder, salt, pepper and ginger. Stir to combine before adding tomatoes, chickpeas, and peas.
Increase heat to medium-high and stir in the coconut milk. Bring to a simmer before adding the potatoes back to the pot. Reduce heat to low and cook everything together for 3-5 minutes before serving.

About Dhaba Style Veg Curry
A Dhaba is a roadside restaurant in the Indian subcontinent. They are on highways, generally serve local cuisine, and also serve as truck stops. Indian food served in dhabas is wholesome and full of rustic flavour. Food is served on big brass or steel thali (plates) and drinks – water, lassi, milk (of several varieties), or tea, as well as shorbas (soups) – are served. In case of a Vegetarian meal, lunch & dinner consists of chana masala, pindi chana, vegetables and lentils, sarson ka saag, palak paneer, bharwan karela, subz korma, Aloo Gobi Sabzi, rajma or kadhi. The basic gravy used for vegetables is onion-tomato-garlic-ginger.
About Aloo Gobi Curry
Aloo gobi is a vegetarian dish from the Indian subcontinent made with potatoes (aloo), cauliflower , and Indian spices. It is popular in Indian and Pakistani cuisines. It is yellowish in colour due to the use of turmeric, and occasionally contains kalonji and curry leaves. We have served vegan sweet potato and coconut curry at The Happy Pear and customers always let us know they enjoyed it. So we thought it's time to take this classic recipe to YouTube. We think the best base for any vegan curry is always coconut milk. It's a satiating fat and really lends itself to adding lots of flavour.
