EASY VEGAN DATE LOAF | LAST MINUTE BAKING
I thought this might be a little series of the days when I just feel like baking and eating something real sweet and real simple with whatever is in the pantry.

RECIPE: 1 cup chopped dates 2 tbsp golden syrup 1 cup boiling water 1 1/2 tsp apple cider vinegar
1 1/4 cup flour 1/2 cup oat bran 1 tsp baking soda 1 tsp baking powder 1 tsp cinnamon 3/4 cup brown sugar (can of course reduce the sugar if you want a less sweet loaf!) 1/2 cup walnuts
In a bowl place chopped dates, golden syrup and add boiling water. Let the dates soak for at least 10-15 minutes. Add ACV.
In another bowl add all dry ingredients except walnuts and mix well. Add dates + water and mix. Fold in walnuts.
Place batter in a lightly greased loaf tin (I always line the bottom with parchment paper as a extra precaution) and bake at 180C for 40-50 minutes or until skewer comes out clean.
(Half way through you might want to check how your loaf is doing, if it's getting quite dark, cover with foil to prevent burning!)
Let cool in pan for 10 mins before taking it out and letting cool completely on a rack.
This is especially good warm right out of the oven with vanilla ice cream on top. ENJOY YOU WONDERFUL PEOPLE!
How to Make Date Walnut Loaf Cake A lovely moist cake packed with sweet dates and crunchy chopped walnuts.
INGREDIENTS 1 egg 3/4 cup sugar 1/2 tsp vanilla 1/2 cup oil 1/2 cup milk 1 1/2 cup plain flour 1/2 tbsp cinnamon 2 tsp baking powder 1/4 tsp salt 1 tbsp instant coffee 1 cup chopped dates 1/2 cup chopped walnuts
Bake for 45-55 minutes at 350° F.

The first recipes for this bread began to appear in the 1920s, and it was so popular in the 1930s that it was used to make tea sandwiches. In fact, these tea sandwiches are so delicious you may want to try them. Take two thin slices of your Date and Walnut Bread and sandwich them together with a layer of cream cheese or butter. Then cut the bread into fingers, squares or triangles.

This quick and easy bread was mixed in the food processor. So easy you'll think you pushed the EASY BUTTON.
Sweet and Moist Date Bread 1 1/4 cups sugar 1/2 cup butter 1 1/2 cups reconstituted dates (see video for instructions) 1 teaspoon salt 1/4 teaspoon cinnamon 1/4 teaspoon ground ginger 1/8 teaspoon nutmeg 1 teaspoon vanilla extract 2 large eggs 2 1/2 cups all-purpose flour (cake flour can be used) 1 teaspoon baking soda 1/2 cup buttermilk Line bottom of 9x5x3' loaf pan with parchment paper grease sides and bottom then give a light dusting of flour
Bake in preheated 350 degree oven for one hour or until toothpick inserted in center comes out clean.
Cool for one hour in pan to help retain the moistness of the bread.
