How To make Debbie's Carrot Cake
2 c Flour, all-purpose
2 c Sugar
1/2 ts Salt
1 ts Baking soda
2 ts Cinnamon, ground
3 Eggs
1 1/2 c Vegetable oil
2 c Carrots, finely grated
1 ts Vanilla extract
1 c Shredded coconut
1 c Nuts, chopped, divided
Cream Cheese Frosting In a mixing bowl, combine dry ingredients. Add eggs, oil, carrots and vanilla; beat until combined. Stir in pineapple, coconut and 1/2 cup nuts. Pour into a greased 13x9x2-inch baking pan. Bake at 350 for 50-60 minutes or until cake tests done. Cool. Frost cooled cake with Cream Cheese Frosting. Sprinkle with remaining nuts. Store in refrigerator.

1 cup brown sugar
3/4 cup freshly squeezed coconut milk
2 tbsp vanilla
1 tsp almond essence
1 tbsp cinnamon
1 tsp mixed spice
pinch of nutmeg
1 stick butter
1 tbsp baking powder
3 tbsp pre- soaked raisins
1 tbsp mixed peel
1 tbsp finely chopped cherries
2 sml eggs beaten
1 cup shredded carrot

CARROT CAKE MILKSHAKE
1 - 8 ounce piece of Carrot Cake
8 ounces unsweetened nondairy milk*
ice, optional
Blend apple pie and nondairy milk in a high powered blender until smooth and creamy.
Add ice if more thickness is desired.
Drizzle with Vanilla Caramel date Sauce if desired. You can get that recipe here:
*You could use vegan vanilla ice cream in place of the nondairy milk but it will be many more calories and probably contain sugar.

Oil - 150ml
Milk - 3tbsp
Grated carrots - 250g
Topping:
Cream cheese - 200g
Vanilla sugar - 2tbsp
