Ingredients Used
1 Duncan Hines French Vanilla box cake mix
1 pk 3.4oz French vanilla instant pudding mix
4 large eggs @ room temperature
2/3 cup melted butter @room temperature or simply use same quality as box instructions (1/3 cup)
1 cup buttermilk (room temp)
1/2 tsp pure vanilla extract
1/2 tsp pure lemon extract
Mix and Bake per box instructions.

It’s 3 Ingredient Buttermilk Biscuit time!! I have many memories of Grandma Barb making from-scratch buttermilk biscuits. They were always the last thing made for the meal, and she’d work quickly and effortlessly. Those biscuits were made and placed into the hot oven in under a minute flat and goodness they were heavenly, and still are. She’s good!

Low-carb, low sugar, dairy-free, and diabetic friendly blueberry cobbler!
So tasty with no exceptions!
Recipe:
2 cups Blueberries, if frozen thaw
1 TBL Lemon Juice
2 TBL Monk Fruit
1/2 TBL Psyllium Husk or 1/4 teaspoon xantham gum
Cobbler drop biscuit
1 large egg at room temperature
3/4 cup almond flour
1/2 cup coconut flour
1/4 cup monk fruit
1-1/2 tsp baking powder
1/4 tsp salt
1/4 cup Coconut Oil, butter, or plant-based butter (melted)
3/4 cup almond milk (could use heavy cream if you do not need dairy-free)
Preheat the oven to 350 Degrees. Grease a 9 inch round pie dish, we used Pam spray with flour.
In a large mixing bowl, combine blueberries with lemon juice, monk fruit, and psyllium husk.
Arrange blueberries into the baking dish.
In another mixing bowl, whisk together the almond flour, coconut flour, monk fruit, salt, and baking powder.
Stir in beaten egg, coconut oil (melted), and almond milk until it forms a thick creamy biscuit batter. If the batter is dry add additional almond milk.
Spoon batter with ice cream scoop onto blueberries.
Bake 35-45 minutes. Serve with whipped cream, coconut cream, or yogurt.
This was very good. Next time we will add additional blueberries and almond flavoring.
Store in the fridge in an airtight container for up to 3 days.
Blackberries or raspberries may be used.

Watermelon Ice with No Added Sugar - Day 8 Southern Queen of Vegan Cuisine Project
Watermelon drinks have never crossed my mind as a thing to do. In my house, not a particularly creative bunch, we were just satisfied to consume the fruit as is. This summer I have seen a couple of watermelon drinks and they all seem to be laden with sugar. I am going through some personal revolution of not disrupting natural sweetness, by adding more, artificial or natural, sugar. So, I will attempt to highlight the beautiful watermelon with lemons and strawberries to make a no sugar added Watermelon Ice.

Watermelon Ice with No Added Sugar
Ingredients:
6 cups watermelon, chopped (and chilled peferebly)
2 cups strawberries, stems removed
Juice of 1 lemon
Directions:
Add watermelon chunks to your blender and blend into slushy.
Add in the strawberries and lemon juice, continue to blend until smooth.
Serve chilled and cheerfully garnished with watermelon, strawberries, umbrellas, etc.
My Verdict:
I really liked this watermelon ice. It was cool and refreshing, and without all the sugar, it was guilt free. The watermelon had a really green taste though. Something like what I would imagine cucumber water to taste and smell like.
