How To make Dried Tart Cheery Scones
3 c + 3 T flour
6 1/2 ts Baking powder
10 ts Milk
1/2 c Dried tart cherries; cut up
1/2 c Sugar
1/2 c Chilled butter; cut up
1 Egg; beaten
1 ts Orange or lemon rind;grated
Preheat oven to 350. Lightly grease baking sheet. Stir together the flour, sugar and baking powder. Cut in butter until mixture resembles crumbs. (A food processor works great.) Stir in dried cherries and grated rind. Combine milk and egg. Mix into dry ingredients, gather dough into a ball. Roll dough out 1/2" thick onto a lightly floured surface. Cut into 3" circles with a sharp knife or biscuit cutter. (A glass does not work well because it crimps the edges and they will not rise as well.) Arrange on a baking sheet, 1" apart. Bake until firm to touch, about 20 minutes. Serve warm. From: American Spoon Foods

RECIPE:
Small Batch of Scones
Makes 12 scones
3 cups Flour
1/3 cup Sugar
1 Tbs Baking powder
½ tsp Salt (non-kosher)
1 stick Butter (cold and cubed)
2 cups Whipping cream
1 cup Dried fruit
½ cup Chopped nuts
½ cup Turbinado* sugar
Sift dry ingredients together
With a pastry cutter, cut in the butter until it is the size of peas
Mix in dried fruit and nuts
Add cream and mix just enough to blend. Do Not Overwork!
Divide dough in half
Roll out about ¾” thick and cut out circles or triangles (can be frozen at this point)
Brush with milk and sprinkle with Turbinado sugar
Bake at 375 degrees for 15 minutes
Allow to cool
Suggested fruit and nut combinations:
Dried cranberry and walnut
Tart dried cherry and pecan
Dried apricot and almonds
Dried mango and macadamia nut
Dried apple and toasted hazelnut
*Turbinado sugar is a partially refined raw sugar. You can substitute sugar in the raw or regular sugar for the topping

Makes 8
12 ounces ripe strawberries, hulled and very coarsely chopped
2⅔ cups (345g) cake flour, plus more for rolling
¼ cup (50g) granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 stick (113g) butter, cut into ½ inch pieces, chilled
¾ cup whole milk ricotta cheese, strained in the refrigerator for at least 2 hours
1 cup (240g) buttermilk, chilled, divided
