Ingredients:
•½ cup milk
•½ cup sugar
•1 teaspoon salt
•4 tablespoons softened + 4 tablespoons melted, unsalted butter
•½ cup warm water
•5 teaspoons yeast
•2 eggs
•5 ½ cups all purpose flour
•vegetable oil
•10 breakfast sausage links
•16 ounce cheese block
•cooking spray
Directions:
•Heat up the milk in a sauce pan until it begins to bubble.
•Remove the pan from the heat.
•Stir into the milk the sugar, salt and 4 tablespoons of softened butter until everything has dissolved in the milk.
•Let cool for 10 minutes.
•Lightly stir the eggs to break up the yolks.
•In a stand mixer with a dough hook attachment, mix together on medium the warm water, yeast, milk mixture, eggs and 2 cups of all purpose flour for about 2 minutes.
•Add ½ of a cup of all purpose flour and continue to mix. If needed, continue adding small amounts of flour until the dough is elastic.
•Once the dough is the proper consistency, lightly flour a flat surface.
•Knead the dough on the floured surface for 10 to 15 minutes. Add flour as needed if the dough is too sticky.
•Coat a large bowl with cooking oil.
•Put the dough in the bowl and roll it around in the cooking oil to coat the dough.
•Place a damp towel or plastic wrap over the bowl and let the bowl sit in a warm, dry area for an hour, or until the dough doubles in size.
•Preheat an oven to 350 degrees.
•Cut the breakfast sausage links in half. If the links are damp, pat them dry. Then, set the links aside.
•Cut the short sides of the cheese block into slices and set aside.
•Grease a baking pan.
•Roll the dough into a log and cut it into quarters.
•Place 3 of the quarters back in the bowl.
•Cut the dough that is not in the bowl into 5 pieces.
•Flatten 1 of the pieces with your palm to form a rough circle.
•Place a slice of cheese in the center of the dough.
•Place a sausage in the center of the cheese so that the long sides of the cheese and sausage are parallel.
•Wrap the dough completely around the cheese and sausage, forming an closed tube of dough with a sealed seam running down one side.
•Place the seam side down on the baking pan.
•Repeat steps 20-24 for the other four pieces of the dough.
•Take out another cut quarter of the dough from the bowl and repeat steps 19-26 until all of the dough is on the baking pan.
•Bake the kolaches in a 350 degree oven for 14 minutes, or until they are golden brown.
•While the kolaches bake, melt 4 tablespoons of butter.
•Brush the melted butter over the tops of the kolaches.
•Let cool for 2-3 minutes before serving.

Dough:
1 1/4 cup (150 g) flour
1/4 cup (60 ml) dairy-free milk warm
3 tbsp (35 g) sugar
2 tbsp (30 g) oil
1 tbsp (10 g) fresh yeast or 1 tsp (3 g) dry yeast
1 pinch of salt
Poppy seed filling:
1/3 cup (80 g) dairy-free milk
1/3 cup (50 g) poppy seeds
5 1/2 tbsp (40 g) powdered sugar or ground Erythritol
3 1/2 tbsp (35 g) raisins
Vegan cheesecake filling:
5.3 oz (150 g) silken tofu
5 tbsp (35 g) powdered sugar or ground Erythritol
1 heaped tbsp (20 g) cashew butter or nut/seed butter of choice
1 tbsp (15 g) dairy-free milk
1/2 tbsp (7 g) lemon juice
1 tbsp (8 g) cornstarch
Crumble:
2 tbsp (16 g) flour
1 tbsp (7 g) powdered sugar
1/2 tbsp (7 g) vegan butter or margarine

Smoked Brisket Kolaches | Easy Leftover Brisket Recipe
Smoking a brisket is always fun, but sometimes you end up with more leftover brisket than you know what to do with. I often times see requests for leftover brisket recipes ideas in the various BBQ groups I follow, so this recipe came together for those who aren't already in the know on our Texan secret weapon....the kolache.
Texas kolaches are bread stuffed with a savory fillings, usually sausage, eggs, cheese, and often times a jalapeno or two. They're as common as a donut when looking for a quick bite on a roadside. This fun twist on the traditional Texan kolache, takes that hunk of brisket in your freezer and puts it to good use. Let me know what you think and thanks for watching!

Ingredients:
1+ lb of leftover Brisket / BBQ
1 cup of shredded cheese of choice
1 tube of biscuit dough
1 jar of pickled jalapenos (or 2-3 fresh sliced peppers if looking for spicy)
