How To Make Buckeye Brownies
Buckeye brownies! Chewy chocolate brownies with a peanut butter fudge topping covered in a silky, buttery, chocolate fudge frosting.

Ingredients
12 Tbsp butter cut into Tablespoon-sized pieces, 170g
3/4 cup cocoa powder 75g
1 2/3 cup granulated sugar 345g
1 Tablespoon water 15ml
1 teaspoon vanilla extract 5ml
2 large eggs + 1 large egg yolk lightly beaten
1 ⅓ cup all-purpose flour 170g
½ teaspoon baking powder 2g
¼ teaspoon salt 2g
Peanut Butter Fudge
2 cups creamy peanut butter 475g
1/2 cup butter chopped into about 8 pieces, 113g
1 teaspoon vanilla extract 5ml
2 1/4 cups powdered sugar 360g
1 Tablespoon milk 15ml
Chocolate Ganache
1 1/2 cups chocolate chips 265g
6 Tablespoons butter cut into pieces, 85g
Instructions

00:22 Preheat oven to 350F (177C) and lightly grease/spray a 13x9 pan (or line with parchment paper).
In a large, microwave-safe bowl, heat butter in microwave until melted.
Stir in cocoa powder and sugar.
Add water and vanilla extract and stir until combined.
Add eggs and egg yolk, stir well.
01:15 In a separate, medium-sized bowl, combine flour, baking powder and salt.
01:23 Gradually add to butter mixture until completely combined.
01:32 Spread batter evenly into prepared pan and bake on 350F (177C) for 25 minutes. Allow to cool completely before covering with peanut butter fudge.
Peanut Butter Fudge
01:59 Combine peanut butter and butter in large heat proof bowl and microwave at 15-second increments (stirring between each) until butter is completely melted.
Stir in vanilla extract.
02:33 Gradually add/stir in powdered sugar.
Add milk and stir well. Mixture should be fudgy enough that you can mold pieces into a ball, but not too stiff that you won't be able to spread it over the brownies (feel free to add additional milk, 1 teaspoon at a time, if mixture is too stiff, or more powdered sugar, 1 Tablespoon at a time if mixture is too soft).
03:06 Drop peanut butter mixture by heaping spoonfuls over the cooled brownies and use a knife to gently spread until the brownies are evenly covered with a thick layer of fudge.
03:38 Prepare chocolate fudge frosting by combining chocolate chips and remaining butter in a medium heat-proof bowl and microwaving at 15-second increments (stirring well between) until completely melted.
Evenly pour chocolate over fudge, spread with a knife.
Allow chocolate to set before slicing and serving (30-60 minutes).

One 14 oz can Sweetened condensed milk
2 cups Semi-sweet chocolate chips
1 1/3 cups Flaked Coconut, unsweetened
1 cup Walnuts, chopped
(Layer the ingredients in the order listed)
Preheat oven to 350 degrees Fahrenheit and bake for 25-35 minutes or until the edges are golden brown.

Ingredients:
1 1/2 cups peanut butter
1/2 cup butter, softened
1 tsp vanilla extract
3 cups powdered sugar
6 oz melting candies
1 tbsp veg oil
Directions:
To a mixing bowl, add in the butter, vanilla extract, powdered sugar and peanut butter. With a hand held or stand mixer, mix until the mixture is completely combined.
Take a cookie scooper, scoop and roll the peanut butter mixture into a bite size ball. Place the ball on a parchment lined baking sheet. Repeat until you run out. Set your candies in the fridge to chill for one hour.
To dip the candies, take the chocolate and melt it in the microwave for 1-2 minutes stirring every 20 seconds or so until melted. Take a toothpick, insert one end into a peanut butter ball and dip it into the chocolate. Place it back onto the parchment lined baking sheet and leave it in the fridge to harden.
Store the candies in an air tight container, with parchment paper between each layer, in the fridge for up to 2 weeks. Enjoy!

Medifast Buckeyes
You don't have to be from Ohio to appreciate a tasty Buckeye treat. It's easy to whip up this chocolatey peanut butter meal. Just watch and learn!
Ingredients:
Chocolate layer:
1 packet Medifast Hot Cocoa
3 Tbsp cold water
Peanut butter Layer:
2 Tbsp Peanut Butter Powder
1 Tbsp cold water
In two separate bowls, combine the powders and water. Whisk with a fork until completely smooth. Using four small cups (I use the Dixie 2 oz salad dressing cups), spread a layer of chocolate on the bottom of each cup. Follow it by 1/4 of the peanut butter. Top with the remaining chocolate.
Freeze until set, approx 1-2 hours. If using the Dixie cups, they should pop right out. If not, warm the sides with your hands for a few seconds and they will come out.
