How To make Easy Layered Casserole
WALDINE VAN GEFFEN VGHC42A:
1 1/2 lb Potatoes; peel, slice thin
Salt and black pepper 17 oz Can whole kernel corn; drain
1 Green pepper; chop
1 lg Onion; chop
4 Carrots; peel, slice
1 1/2 lb Ground beef
1/2 ts Dried marjoram leaves
8 oz Can tomato sauce
1/2 c Cheddar; grate
Parsley; garnish Layer potatoes evenly in oiled baking dish. Sprinkle with salt and pepper. Spread corn over the potatoes. Sprinkle with green pepper, onions and carrots. Crumble beef over the top. Sprinkle with marjoram and additional salt and pepper. Top with the tomato sauce, spreading evenly. Bake, covered, at 350~ for 30 minutes. Sprinkle with the cheese. Bake 10 to 15 minutes longer. Garnish with parsley. -----

FLAVORFUL TACO CASSEROLE (SIMPLE LAYERED RECIPE)
I wanted to try out the new Trader Joe’s Everything But the Elote seasoning so I paired it in this recipe and it turned out great! This recipe is extremely versatile, as you can make it with ground beef, make it vegetarian or even vegan. Feel free to add more toppings depending on what you like!
Taco Casserole Recipe
Ingredients:
1 can of refried beans
Any type of meat
Onion
Taco seasoning
Sour cream
Shredded 3 cheese blend
Olives
Tomato
Lettuce
Preheat over to 350 degrees.
Start by dicing onion. Add some oil to a sauté pan and add onion. Sprinkle salt and pepper to taste. Once onion is translucent (about 3 minutes), add the meat and the taco or elote seasoning. Cook over medium heat for about 5 minutes. Set aside.
Get a small baking dish and add the refried beans at the bottom and spread evenly. Next add your cooked meat over the top of the beans. Layer about 1 Cup of sour cream over the top of the meat and cover with shredded cheese.
Place baking dish in oven for 30 minutes. Take the dish from the oven and add tomato and olives. Cook an additional 6-8 minutes. Once the casserole is finished cooking, top with fresh chopped lettuce or even crunched up chips. Enjoy!

4 to 5 Roasted Poblano Peppers
1 1/2 cups freshly shredded mozzarella cheese (your choice of cheese)
2 Potatoes sliced potatoes
2 cups Creamy refined beans
Savory sauce (Ingredients listed below)
2 cups shredded chicken (I used 1 large chicken breast that looked more like 2 ????)
3 to 4 Corn tortillas
Tomato Savory Broth
2 Cups Water
1 can (7Oz.) diced Hatch roasted chilis
1/4 - 1/2 Onion
3 Chopped Tomatoes (1 ripe vine tomato and 2 Roma)
2-4 Garlic Cloves
1 Tbs Bouillon (If more is needed start with 1/4 Teaspoon extra at a time)
1/2 Tbsp Mexican Oregano
1-2 Tbsp Oil
Cilantro to taste (8-10 stems)
1/4 cup Tomato Sauce (Optional)
Creamy beans
Oil
1/4 cup water or bean broth
2 Cups pre-cooked or canned pinto beans
1/2 chopped onion
1 serrano or jalapeño (to taste)

*Bring the pot to boil- Add potatoes- Continue cooking for 10 minutes- Strain and coat with oil to prevent sticking
*If you have flimsy soft corn tortillas- try frying before adding them to the casserole
