Thai basil chicken (also known as Thai Holy Basil Chicken) is one of the most popular dishes in Thailand. Typically, you can find all kinds of meat such as pork, chicken, beef, and seafood stir fried with Thai holy basil and garlic. Roland has cooked a drier style in this video but if you like some gravy in your dish, add some water or chicken stock and thicken the sauce up with some cornstarch solution before serving. Lemon Basil Chicken
Ingredients:
5 chicken thighs, boneless, skinless
¼ - ⅓ cup olive oil
The zest from one organic lemon
2 -3 Tbsp fresh lemon juice
1 tsp. Garlic powder
1 tsp. Dried oregano
Salt and pepper to taste
8-10 leaves of fresh basil, rolled and chopped
Directions:
Combine olive oil, lemon zest and juice to a marinating container, and mix to combine. Lay the chicken thighs in the dish and toss to coat with tongs.
Season the thighs with salt, pepper, garlic powder, and oregano. Sprinkle the chopped basil overall and then toss the chicken over. Season the second side with the salt, pepper, garlic powder and oregano.
Cover the dish with plastic wrap and place in the refrigerator for 2 hours up to overnight. When you are ready to grill, preheat your grill to medium high heat.
When hot, lay the chicken on the grill using tongs. You may have to lower the temperature to medium low at this point. Close the grill and cook for about 4 minutes. Check for grill marks and then turn the pieces over.
Cook on the second side for another 4 minutes and then check the internal temperature with an instant read thermometer. The chicken is done when the temperature reaches between 160 -165 degrees F.
Remove the chicken to a plate and lay a piece of foil over the top to keep warm. You only have to let the chicken rest 3 to 5 minutes before serving. Enjoy!
