Artichoke Spinach Dip with Roasted Red Bell Peppers

Ingredients
14 ounces canned (or frozen, thawed) artichoke hearts, drained, diced (not marinated)
9 ounces frozen creamed spinach, thawed
1/2 cup finely diced red onion
1/2 cup diced roasted red bell pepper
1/3 cup grated Parmesan
2 tablespoons jarred pesto sauce
2 tablespoons mayonnaise
1 teaspoon freshly cracked black pepper
1/2 teaspoon salt
1 package tortilla chips
1 package pita chips
Directions
Preheat a gas or charcoal grill to 350 degrees F.
In a medium mixing bowl, add all the ingredients, except the chips, and mix well. Transfer to a 9 by 9-inch foil baking pan and cover with aluminum foil. Put on the grill over indirect heat (350 degrees F is ideal) and cook for 15 minutes, turning every 5 minutes, to keep the heat even. Carefully remove from the grill and serve with the chips.
Cook's Note
The dip can be prepared in advance and kept in the refrigerator until ready to cook. If this is done, please add 10 minutes to the cook time.

2 cups heavy cream
8 oz room temp cream cheese
1 cup grated parm
2 cups mozzarella
4-5 cups spinach
1 lb rigatoni
diced parsley
Vegan Spinach Artichoke Dip
Delicious vegan spinach artichoke dip makes for a fantastic appetizer with chips, crackers, and veggies to dip.

Ingredients
1 teaspoon oil
3 cloves garlic - chopped
10 ounces fresh baby spinach
16 ounces vegan cream cheese - room temperature
⅓ cup vegan mayo
1 (14-ounce) can artichoke hearts - drained and chopped
¼ cup nutritional yeast - or vegan parmesan
¼ teaspoon black pepper
¼ teaspoon salt
Instructions
- Preheat oven to 400°F.
- Heat oil in a large pan on medium heat. Saute garlic until browned, about 2 minutes. Add in spinach and saute until wilted. Remove from heat.
- In a baking dish, mix together the vegan cream cheese, mayo, artichoke hearts, nutritional yeast, sautéed spinach, salt, and pepper.
- Bake for 15-20 minutes, or until the dip is hot and bubbly. Serve warm!

1 cup grated monterrey jack cheese
1/2 cup grated Swiss cheese
1 1/2 cups shredded Parmesan cheese
3/4 cup quarter artichoke hearts
1 bunch fresh spinach
1/2 cup mayonnaise
1/2 cup prepared alfredo sauce
2 garlic cloves chopped
1/2 teaspoon black pepper
1/2 cup sun-dried tomatoes in a jar
