Blondell’s Amazing Apple Crisp
Ingredients:
1 Box White Cake Mix (sifted)
2 Cans of Apple Filling (not canned apples)
1 Cup of Pecans (Finely Chopped)
1 ¼ Cup of Granulated White Sugar (Domino’s)
1 ½ Stick of Real Butter (not margarine)
Pure Vanilla Extract Flavor (not imitation)
Pure Almond Extract Flavor (not imitation)
Ground Nutmeg
Ground Cinnamon
Salt
Preparation:
Set oven to 350 degrees. Butter a 9 x 13 nonstick pan. Chop pecans to desired texture. Inside a bowl cut apple filling into small chunks. Then add sugar, salt, ground nutmeg, ground cinnamon, pure vanilla extract, and pure almond extract to apple filling. Adjust flavor as needed. Pour apple filling mixture inside buttered pan and spread evenly. Sprinkle one cup of sifted white cake mix evenly over apple filling mixture. Add more if desired. Slice butter thinly and place over entire pan to cover. Next sprinkle chopped pecans on top, then bake for 25 to 30 minutes until crisp on top. Great with vanilla bean ice cream or whip cream. Serves 8 or more.

Mini Apple Cobblers for ✌️#shortsyoutube #foodshorts
Apple cobbler filling:
2 apples, (peeled, cored and diced medium chunks. I use one Granny Smith, one Gala)
1/8 tsp nutmeg
1 tablespoon lemon juice + 1 tsp lemon zest
Pinch of salt
1/2 teaspoon cinnamon
1/8 cup dark brown sugar
1/4 teaspoon vanilla extract
0.5 oz apple cider or unfiltered no added sugar apple juice
1 teaspoon cornstarch
Combine everything but the vanilla, cider and cornstarch in a medium pan over medium-high heat. Cook until apples are tender but still a bit firm to the bite. Mix the cider or juice with cornstarch in a small bowl and add into the apple mixture. Stir that in for a couple minutes and cook until the mixture thickens slightly. Remove pan from heat and stir in the vanilla. Set aside to cook slightly.
Prepare two mini ramekins with cooking spray and pour in the apple mixture. Top with streusel topping and bake at 350F for around 10 minutes or until the top is golden brown. Remove from the oven and allow the cobblers to cool for 5-10 minutes before topping with ice cream and salted caramel. Enjoy warm!

Streusel Topping:
1/2 cup all purpose flour
1/4 cup granulated sugar
1/8 cup dark or light brown sugar
1/4 tsp salt
1/8 tsp cinnamon
1/4 tsp baking powder
1/4 tsp vanilla extract
2 oz unsalted butter in chunks
Combine ingredients until mixture is combined into uniform big chunks.

1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
6 tablespoons unsalted butter melted
1/2 teaspoon salt

APPLE MIXTURE
1 pound baking apples small diced, (1 lb = 3 apples)
1 tablespoon unsalted butter
3 ounces dark brown sugar (3 ounces = 6 tablespoons)
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/8 teaspoon ground nutmeg
1/2 small lemon zest and juice
1/2 tablespoon cornstarch
1-ounce sugar-free apple juice (1 ounce = 2 tablespoons)
1/2 teaspoon vanilla extract
STREUSEL TOPPING
8 1/2 ounces all-purpose flour (8 1/2 ounces = ~ a little less than 2 cups)
60 grams granulated sugar (60 grams = ~ 4 + 3/4 tablespoons)
60 grams light brown sugar (60 grams = ~ 4 + 3/4 tablespoons)
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
160 grams unsalted butter cold and diced large chunks, (160 grams =~1 stick of butter +2 1/2 tablespoons of butter)
1 teaspoon vanilla extract
CREAM FILLING
1 cup heavy whipping cream
1/2 cup confectioners' sugar
3 tablespoons mascarpone
3 teaspoons dry milk powder
1 whole vanilla bean, seeds
1/2 tablespoon vanilla extract
