How To make Fideus with Clams and Garlic Mayonnaise
2/3 Cup mayonnaise
2 garlic cloves
minced
1 Tablespoon buttermilk
1 Bunch fresh chives :
minced
3 Tablespoons olive oil
1 onion chopped
1 Leek (White & Pale Green Parts Only)
2/3 Cup dry white wine
1 1/2 Pounds fish bones :
from white fish
8 Cups water
6 Sprigs fresh parsley
1 Teaspoon whole black peppercorns
1 bay leaf
12 Ounces fideous pasta or vermicelli
20 Large clams in shells -- scrubbed
Whisk mayonnaise, garlic and buttermilk in small bowl until smooth. Stir in chives. Season to taste with salt and pepper. Cover and refrigerate 1 hour to allow flavors to blend. Heat 1 tablespoon oil in heavy large Dutch oven over medium heat. Add onion and leek and sautJ until tender but not brown, about 10 minutes. Add wine and boil until almost all liquid evaporates, about 2 minutes. Add fish bones, water, parsley, peppercorns and bay leaf. Simmer until liquid is reduced to 6 cups, about 1 hour. Strain; discard solids. Heat remaining 2 tablespoons oil in heavy large Dutch oven over medium high heat. Break pasta into 2 inch lengths and add to Dutch oven. saute until pasta is golden brown, about 5 minutes. Add stock. Cook until pasta is almost tender, but mixture is still soupy, about 3 minutes. Add clams, pushing into broth. Cover and cook until clams open, about 8 minutes. Discard any clams that do not open. Season to taste with salt and pepper. Ladle into bowls. Spoon dollop of garlic mayonnaise over and serve. 10/24/96 show

How to Make Fideos | Chef Jose Garces | Tips & Techniques
????Fideos Wednesday! No alliteration necessary I will eat these any day of the week!????
✅Fideos:
4 oz Toasted Blanched Fideos
8.5 oz Saffron Calm Stock
2 oz Scallions
6 oz Cockles
1 oz Seabeans
1.5 Garlic Mayonnaise
1 oz Chorizo Bilbao
Pinch of Chili Flake
✅Saffron Clam Stock:
1 oz Saffron
5 oz Clam Juice
5.5 oz Caramelized Onion
1.5 oz Fennel
5.6 oz White Wine
✅Garlic Aioli:
6.7 oz of Egg Yolks
2 oz of Lemon Juice
3 oz Roasted Garlic Puree
.5 oz of Raw Garlic
1 oz Salt
42 oz Blended Oil
Warm water as needed
✅Fideos:
In a large sauté pan, render chorizo. Add garlic, chili flakes and the fideos. Saute for a few mintues. Add cockles, saffron calm stock. Cover and cook until fideos are cooked through, the liquid is absorbed and the cockles are opened. Transfer to a cazuela with cockles on the bottom. Add sea beans to the remaining fideos and place in cazuela. Bake until the top is crispy and browned. Top with scallions and garlic mayonnaise.
✅Saffron Clam Stock:
Combine all ingredients except saffron and cook for 15 minutes until the fennel is tender. Add saffron and allow to steep for another 15 minutes. Puree with a stick blender and strain through a chinois. Chill and package.
✅Garlic Aioli:
Combine yolks with lemon juice, roasted garlic, raw garlic and salt in a robot coupe. Blend for two minutes to help cook the yolks. Slowly emulsify the blended oil adjusting the thickness with warm water along the way. Adjust seasoning as necessary.
