How To make Filled Cherry Cake
CAKE:
1 Cup Butter
1 Cup Sugar
2 Large Eggs -- Well Beaten
2 Cups All-Purpose Flour
3 Teaspoons Baking Powder
1/2 Teaspoon Salt
1 Can Cherry Pie Filling
StrEUSEL TOPPING:
1/4 Cup Sugar
1/4 Cup Flour
2 Tablespoons Butter
1/2 Cup Walnuts or Pecans -- Chopped
With an electric mixer, cream butter and sugar. Add eggs and mix. Add flour, baking powder, and salt. Mix well, until creamed. Spread a liberal amount of the dough into a greased 15X11-inch pan. Cover with cherry pie filling. Scatter remaining dough by teasponful over filling.
FOR StrEUSEL TOPPING: In small bowl, mix sugar and flour. Cut in butter with a pastry blender until crumbly. Stir in nuts. Sprinkle streusel topping over cake and bake at 350 degrees for one hour.

The brioche playlist on my channel is full of different recipes savoury and sweet. Sweet ones are usually the more popular ones, so I decided to make this cherry and chocolate filled loaf.
I saw a similar recipe on the King Arthur Baking website and thought I could adapt it to my style and turn it into a nice sliceable loaf. Once again, my USA Pan Pullman tin came in handy. It’s been used quite a lot in the last few months and for good reason. It is one of my favourite pieces of baking equipment. You can use a regular 2lb (900g) tin for this recipe.

Used pan : 18 cm (7 inch) round pan
1 tsp = 5 ml, 1 Tbsp= 15 ml, 1 cup= 250 ml
[Sponge cake]
4 eggs
120 g (1/2 cup + 2 Tbsp) granulated sugar
120 g (1/2 cup and 1/4 cup) cake flour
1/4 tsp baking powder
2 Tbsp(30 g) milk
2 Tbsp(26 g ) vegetable oil
1 tsp vanilla extract(optional, I skipped it.)
[Cherry filling]
40 g(1/6 cup) granulated sugar
10 g(1 1/2 Tbsp) cornstarch
80 ml(1/3 cup) cherry juice(from canned cherry)
200 g (1 cup) cherries(from canned cherry)
1 tsp lemon juice (optional)
1 tsp vanilla extract (optional)
[Whipped cream]
600 g (2 and 1/2 cups) heavy whipping cream
60 g (1/3 cup)granulated sugar
[Syrup]
40 g (1/6 cup) granulated sugar
80 g (1/3 cup) hot water
*Dissolve sugar , then cool to use completely.
