How To make Fresh Pineapple Pie
1 recipe for Double Crust Pie
2/3 cup granulated sugar
1/4 cup all purpose flour
4 cups peeled, cored, cubed, fresh pineapple) -- about 1 1/2
med. 1/2 cup snipped dried apricots
1/3 cup chopped macadamia nuts or almonds
2 Tablespoons rum flavoring plus 2 T. water
1 teaspoon granulated sugar
1/8 teaspoon ground cinnamon
1 Tablespoon milk
Prepare and roll our pastry for double crust pie as directed. Line a 9 inch pie plate with half of the pastry.
For filling, combine 2/3 cup sugar and the flour. Add the pineapple, apricots, nuts, and rum, then gently toss until coated. Transfer fruit mixture to the pastry-lined pie plate. Trim bottom pastry to edge of pie plate. Cut slits in the top crust. Place top crust on filling. Seal and flute edge.
Combine 1 teaspoon sugar and the cinnamon. Brush top crust with milk. Sprinkle with sugar-cinnamon.
Cover edge of pie with foil. Bake in a 375 oven for 25 minutes. Remove foil. Bake 20-25 minutes more or until golden. Cool pie on a wire rack. Cover and refrigerate any leftovers. Makes 8 servings.

PINEAPPLE PIE RECIPE
DOUGH
*170g sugar
*10g salt
*10g instant dry yeast
*food color [egg yellow]
*100g margarine
*1 1/4 can water
*1 tsp vanilla
*500g bread flour [first class]
*500g bread flour [third class]
FILLING
*8 cans water
*1 100g sugar
*food color [egg yellow]
*1 sachet Tang pineapple juice[or any brand]
*1 tsp vanilla
*10g salt
*50g margarine
*1 kg cornstarch and 8 cans of water
TAKE NOTE:
*1 can is equivalent to 370mL
*baking time may varies depending on what type of oven you used
*resting time may varies the surroundings temperature
*the water measurement depends also the kind or the brand of flour you used
*if you want to delay the resting time you can adjust the measurement of the yeast

Best Pineapple Pie
Ingredients for crust:
1 1/2 cup of flour (i use APF)
8 Tbsp. Butter soften
1/2 tsp. salt
1 Tbsp. sugar
4-5 Tbsp. iced cold water
Preparation:
In a big bowl put flour, add salt and sugar, then add soften butter, mixed.
Slowly add iced cold water. Mixed until dougu is form. Wrap in a foil or plastic set aside in a fridge for 30 minutes.
After 30 minutes.
Remove from fridge and unwrap
Sprinkle flour on kneading board or clean surface, roll the dough, flatten into circle ( that will fit into 25cm pan) or your preferred pan
Spray of wipe the pan with oil. Fit the dough in a pan carefully, cut off the excess dough.
Set aside.
Ingredients For Filing:
1/2 cup corn starch
1/2 cup condense milk
5o ml water
1 tin can crushed pineapple (485g)
2 tbsp. butter
Preparation:
Heat a pan in stove, melt the butter, add pineapple crust and condense milk. Mixed before adding the mixture of corn starch.
Keep stirring until it thicken.
Turn of the stove, poimur the filling into the crust .
For added toopings:
Heat the oven 190 degree celcius.
Use one (1) egg white (you can more), beat until bubbles form. You can add one (1) tablespoon of white sugar and 1/4 teaspoon cream of tartar.
Beat againbuntil stiff peak reach, spread on top of the pineapple pie, cover with foil and bake.
Baking time:
Bake for 15 minutes and the lower the temperature up to 150 degrees celcius and bake until the top turn brown. Oven may vary.
