How To make Fried Apple Pies
2 tb Butter
2 lb Apples; core, dice
1/2 ts Ground cinnamon
1 pn Nutmeg
1/4 c Sugar
1/4 c Light brown sugar
1 1/2 c Water
1/2 Lemon; juice of
1 ts Vanilla
1 tb Cornstarch
3 c Flour
2 ts Sugar
1 1/2 ts Salt
1/4 ts Baking powder
6 tb Lard or solid vegetable
-shortening 1 Egg
3/4 c Milk
Powdered sugar in shaker 2 Scoops vanilla bean ice
-cream Fresh sprigs of mint Preheat the fryer. In a sauce pan, melt the butter. Add the apples and saute for 2 minutes. Stir in the cinnamon, nutmeg, 1/4 cup sugar, and brown sugar. Continue sauting for 1 minute, stirring constantly to dissolve the sugar. Add the water and lemon juice. Bring the liquid up to a boil. Add cornstarch dissolved in 1 tb water. Whisk the vanilla and slurry into the liquid. Reduce the heat to a simmer and cook for 15-20 minutes, or until the apples are soft. Remove from the heat and cool completely. In a mixing bowl, sift the flour, sugar, salt and baking powder, together. Cut in the lard until it resembles coarse meal. In small bowl, whisk the egg and milk together. Gradually add the egg mixture to the flour mixture, working it to make a thick dough. Break the dough into 12 equal portions. On a lightly floured surface, roll the dough pieces into thin rounds, about 5" in diameter. Put 1/4 cup of the mixture in the center of each round, fold over and crimp the edges with a fork. Fry the pies, two to three at a time, in the hot oil, until golden brown. Remove from the oil and drain on a paper-lined plate. Powder the pies with powdered sugar. Lay the pies on a platter and serve with vanilla bean ice cream. Garnish with drizzle of caramel sauce, powdered sugar, and fresh mint. Source: Essence of Emeril, Emeril Lagasse, TVFN. - 1/2 cup (106g) granulated white sugar
- 2 teaspoons (4g) ground cinnamon
- 1/2 teaspoon (1g) ground allspice
- 1/2 teaspoon (4g) fine sea salt
- juice of 1 lemon
- 1 tbsp (9g) corn starch dissolved in 2 tablespoons (21g) water
Pie Crust:
- 2 1/2 cups all-purpose flour (375g), plus extra for rolling
- 3/4 cup unsalted butter, very cold, cut into 1/2 inch cubes
- 1.5 teaspoons (10g) fine salt
- 2 teaspoons (10g) sugar
- 6 to 8 tablespoons (108g) ice water
Baked Version:
- Puff pastry or pie dough...
- apple filling
- egg wash
- 1/2 cup (100g) granulated sugar
- 1.5 teaspoons (5g) ground cinnamon
- 1/2 teaspoon (2g) garam masala
- 1/4 teaspoon ground nutmeg
Filling:
- 4 apples
- 3/4 cup (150g) packed light brown sugar
- 1/4 cup (55g) granulated white sugar
- 2 teaspoons (5g) ground cinnamon
- 1/2 teaspoon (1g) ground allspice
- 1/2 teaspoon (2g) fine sea salt
- juice of 1 lemon
- 1 tbsp (7g) corn starch dissolved in 2 tablespoons water

Fried Apple Pies - Apple Turnovers - Simple and Easy - The Hillbilly Kitchen
Fried Apple Pies – Apple Turnovers – Hand Pies. No matter what you call them these fried pies are special treats. They are one of those foods will bring back memories and make new memories. Whether you had them at your grandma’s house on Sunday or you had them at a county fair or festival they are as good as you remember.
This is a basic recipe made with everyday ingredients. There is no need to make as special shopping trip and you don’t have to have any special kitchen tools.
Simple foods have a pure delicious taste, and this is the perfect example of a simply delicious simple food. They have been enjoyed by countless generations for hundreds of years and the recipe is well worth passing on to the next generation.

Ingredients:
½ cup Milk
2 cups Self-Rising Flour + More for rolling dough
1 Egg
¼ cup Butter
1 batch of Fried Apples:
4 or 5 cups uncooked Apples
1/4 Cup real butter
1 Teaspoon cinnamon
1/4 to 1/2 Cup Sugar

FRIED APPLE PIES from an IRON SKILLET - How to make FRIED APPLE PIES Recipe

OLD FASHIONED FRIED APPLE PIES from a IRON SKILLET
4-5 cups apples peels, seeded & cubed
1/2 cup sugar
1/2 teaspoon cinnamon
1 tablespoon butter
1 tablespoon water
Cook apples, sugar, cinnamon, butter and water together in a large non-stick skillet, over medium-heat, for 15 minutes. Stirring occasionally. Remove from heat. Cool completely.
PIE DOUGH
1 1/4 cups self-rising flour
1/2 cup buttermilk
1/4 cup all-vegetable shortening
1 egg
1. In a medium mixing bowl add flour. Cut shortening into flour with a fork or a pastry tool.
2. With fork, beat egg into buttermilk.
3. Make a well in the center of flour mixture. Add buttermilk mixture. Using fork...pull dry ingredients into the wet ingredients until blended.
4. Make dough into a large ball...place onto lightly floured surface. Cut dough into 4 equal parts. Cut each quart in half making 8 pieces of dough.
5. Roll each of the eight pieces of dough into 6 circles.
6. Add about 2 tablespoons of cooled apple filling onto each dough circle. Fold dough over apple filling to look like a half moon shape. Lightly dampen edge of inside dough with water to help ends seal. Use fork to seal edges together.
7. In a 12 cast iron skillet...add 3/4 cups vegetable/canola oil. Heat over medium-low heat. Add only two pie at a time to hot oil. Cook 2 minutes on each side or until golden. Drain on cooling racks. Sprinkle with sugar & cinnamon mixture (1 teaspoons cinnamon & 4 teaspoons sugar) immediately after removing pies from oil.
Makes 8 Fried Apple Pies
