How To make Frijoles Borrachos
2 c Pinto beans
6 c
water or more as
needed 12 oz Beer
2 ts Bacon drippings or
Peanut oil 1 lg Onion :
chopped
2 Garlic cloves minced
2 Fresh jalapenos or
1 To 2 serranos :
chopped
2 Pickled jalapenos chopped
1 t Chili powder
1 t Salt :
optional
Pick through the beans and rinse them, watching for any gravel or grit. Soak the beans in water, enough to cover them by several inches, preferably overnight. Drain the beans, and add them to a stockpot or a large, heavy saucepan. Cover them with the water and beer. Simmer the beans, uncovered, over low heat. After 1 hour, stir the beans up from the bottom and check the liquid level. If there is not at least an inch more water than beans, add enough hot water to bring it to that level. Simmer the beans another 30 minutes, then check them again, adding water as needed. When the beans are well softened, add the remaining ingredients, and continue simmering. Cook at least 15 more minutes, keeping the level of the water just above the beans. The beans are done when they are soft and creamy but not mushy, with each bean retaining its shape. There should be extra liquid at the completion of the cooking time, although the beans should not be soupy. If you want the liquid a little thicker, squash a few of the beans in the bottom of the pot with a potato or bean masher. Serve the beans immediately, or cover them and keep them warm for as long as 1 hour. Or let them cool, and refrigerate or freeze them for later use. Shared and MM by Judi M. From Canned Beans To Charro Beans | No one Will Know The Difference ❤
CHARRO BEANS is one dish I prepare often, they are very popular here in South Texas, we also love to barbecue and have family gatherings and Charro Beans are a must... Charro Beans from a can started when I was in a rush to come up with a side dish and I didn't have time to cook a fresh pot of beans, so I used canned and now it's the way to go for me especially if I'm in a rush. It takes a few minutes and a few ingredients to prepare these and no one will know the difference.
INGREDIENTS----------------
4 16oz Cans Pinto Beans (I used Bush's)
5 slices thin cut bacon (chopped)
1/3 med onion (chopped)
1 large Roma tomato (diced)
1 finely minced garlic clove
1 jalapeño (diced small) (optional)
Small bunch cilantro (chopped)
1 1/2 Tbsp Chicken bouillon tomato flavored (Knorr)
2 C. water

CHARRO BEANS (cowboy beans) is a traditional Tex Mex dish, they are made with Pinto Beans in a delicious broth that is packed with flavor. CHARRO BEANS are named after the traditional Mexican cowboy horseman or charros. It is a perfect side dish that goes perfect with Carne Asada, Beef or Chicken Fajitas, or the traditional Mexican Sopas (stews). I love seasoning the broth with tomato flavored chicken bouillon, pepper and adding bacon, sausage, onions, garlic, tomatoes, jalapeños and cilantro for sure, but the beauty of the Charro Beans is that you can mske them your own by adding what you want...some people like to use chorizo, ham, pork or weenies, and it's all good too. Charro Beans were always a must side dish when I was growing up, especially when we barbequed on weekends or for family gatherings, Charro Beans have been a tradition in my family and I have kept the tradition going as an adult.
INGREDIENTS
BEANS
1 LB. Pinto beans (cleaned and rinsed well)
1/2 medium onion (scored)
2 tsp salt
2 large garlic cloves (mashed)
8 C. water
CHARRO BEANS WITH BROTH
5 slices thick cut smoked bacon (diced)
1/2 medium onion (diced)
5 medium green onions (chopped white and green)
1/2 smoked beef kielbasa (slices)
1/2 tsp garlic powder
1/2 tsp onion powder
3 large minced garlic cloves
2 large Roma tomatoes (diced)
2 Tbsp canned sliced jalapeños (optional)
1/4 C. jalapeño juice (optional)
medium/large bunch chopped cilantro
1 &1/2 Tbsp tomato flavored chicken bouillon
(I like KNORR brand) (won't taste the same if you leave this out)
