7 inch Cake Pan and 3.5 inch deep
(If you are using a different size of cake pan then adjust the baking time accordingly. For example with a bigger wider pan will need less baking time)

1 + 1/2 Cup (225 g) All Purpose flour (PLEASE NOTE - This is the correct quantity of the All Purpose Flour - The cup quantity measurement that I have provided in the video is incorrect)
2 Teaspoon Baking powder
1/4 Teaspoon Baking Soda
1/8 Teaspoon Salt
1 Teaspoon Ground Cinnamon
1 Teaspoon Ground Nutmeg
1 Teaspoon Ground Cloves
1 Cup (250 ml) Almond Milk OR regular Milk for non-vegans
3/4 Cup (175 ml) Olive Oil OR Oil of Choice OR melted coconut Oil OR melted butter (for non vegans)
1 Cup (200g) Coconut Palm Sugar OR Dark Brown Sugar
2 Tablespoon Ground Flaxseed
2 Tablespoon Lemon Juice
Zest of 2 Lemons OR Oranges

1/2 Cup (70 g) Ground Almonds OR Almond flour
1 Cup (150 g) Dates (Finely chopped)
1/2 Cup (100 g) Raisins (Finely chopped)
1/2 Cup (100 g) Candied Fruits & Peels OR Tutti Frutti (Optional) (finely chopped)
1/2 Cup (50 g) Walnuts (Finely chopped)
1/2 Cup (50 g) Cashew Nuts (Finely chopped)

Finally I have brought you my Keto, Sugar free, Gluten free, Grain free Fruit Cake, right in time for Christmas. This has been quite challenging to come up with especially since this is one cake that needs too have a caramel color and it should be full of dries fruits and nuts. Dry fruits are high in carbs and in India I cant find any of the caramel colour sweeteners. I had to whip up a few hack and find some smart substitutions. I am quite proud of the recipe and hope it translates just as well to you. I hope you all were looking for healthy keto cake recipe alternative for Christmas cake. 4 Tbsp Brandy/Rum
For the Cake:
1 Cup Coconut Flour
3 Tbsp Flax Seeds Flour

INGREDIENTS:
• 300g raisins
• 300g sultanas
• 200g cherries glacé
• zest from 1 lemon
• zest from 1 orange
• 100ml pineapple juice
• 225g softened butter
• 225g soft brown sugar
• 4 medium eggs
• 250g plain flour
• 2tsp mixed spices (ground cinnamon, ginger, nutmeg, cloves)
• 40g cashew nuts
• 40g walnuts
• 40g hazelnuts
• sugar glaze (200g powdered sugar + 3 tbsp milk + vanilla extract)
INSTRUCTIONS:
1. Put the raisins, sultanas, cherries in a bowl with the zest and 100ml pineapple juice. Stir for few times, cover with cling film and leave to soak for one day stirring occasionally.
2. Beat the butter and soft brown sugar together in another large bowl until creamy.
3. Add in 4 eggs and beat until sugar is slightly dissolved.
4. Add flour and spices and gently incorporate them until smooth.
5. Add nuts and incorporate.
6. Add the soaked fruits and stir until well mixed.
7. Line a 20 cm deep round /square cake tin with 3 layers of baking paper.
8. Put the batter into the cream tin and level the top.
9. Cut 2 pieces of baking paper to the same size as the top of the cake and cut a 3cm hole in the centre of each. Lay on top of the cake- this will help stop the top browning too much during the baking.
10. Bake in the preheat oven at 150°C for one hour then reduce the oven to 140°C and bake for another 2 hours or 2 hours and half or until a skewer inserted in the middle comes out clean.
11. Cool the cake in the fridge for few hours or overnight before removing from the tin.
12. Remove the cake from the tin and remove the paper.
13. Decorate how you like.
14. For sugar glaze just mix with a spoon the powdered sugar, milk and vanilla extract.
Enjoy it!
NOTES:
• Pineapple juice can be replaced with any other fruit juice or tea. Recommend is to use brandy but I don't have.
• Use any nuts or dried fruits but in the same weight.
• Make sure all the ingredients are at room temperature.
• Please use 3 layers of baking paper in the cake tin to prevent from burning the cake as need to bake for at least 3 hours.

Vanilla extract 1 teaspoon
Almond essence ½ teaspoon (optional)
