How To make Fruit Pockets
2 c Cake flour
2 ts Baking powder
1/4 ts Salt
2 tb Sugar, confectioners
2 tb Butter
2/3 c Milk
1 Egg white; slightly beaten
filling:
1/4 c Raisins; chopped
1/4 c Nuts; chopped
2 tb Orange juice
1/4 ts Cinnamon
1 tb Lemon juice
1/4 c Citron; chopped
1/4 c Currants
1/4 ts Allspice
1/4 ts Cloves
2 tb Sugar
Sift flour, measure, and sift with baking powder and salt. Cut in butter with 2 spatulas. Add milk. Mix lightly until well blended. Turn onto lightly floured board. Roll in sheet 1/3 inch thick. Cut in ovals 4 inches long. Combine raisins, nuts, orange juice, lemon juice, spices, currants, citron, and sugar. Mix thoroughly. Place 1 tablespoon on half of each oval. Brush edges of dough with egg white. Fold over. Press firmly together. Press lightly to flatten. Make 3 short cuts across the top of each oval with the scissors. Sprinkle with powdered sugar. Makes 9-10 hand pies
Ingredients:
For the crust:
2 cups (250g) All-purpose flour
1/2 teaspoon salt
1 tablespoon Sugar
2/3 cup (155g) Butter, chilled and cubed
1/3 cup (80ml) Ice cold water *if needed add more
For the filling:
3 Apples
2 tablespoons (30g) Butter
1/4 cup (50g) Sugar
1/2 teaspoon Cinnamon
1/4 teaspoon Nutmeg (optional)
2 tablespoons (16g) Cornstarch
Egg wash for brushing
Directions:
1. Make the dough: in a large bowl whisk flour, salt and sugar. Add cubed butter and using a dough blender, blend the dough with the butter until crumbs are formed. You also can do this process using a food processor.
2. Add the water and stir until incorporated.
3. Cover the dough with a plastic wrap and refrigerate for 1 hour.
4. Meanwhile make the filling: peel and chop the apples.
5. In a small heavy bottomed saucepan, melt the butter. Then add chopped apples, sugar, cinnamon and nutmeg. Cook over medium heat until apples are tender, about 8-10 minutes. Remove from heat, add cornstarch, stir and set aside to cool.
6. Assembly: preheat oven to 375F (190C).
7. On a floured surface roll out the dough to a 1/8 inch (3mm) thick. Using a round cutter, cut out 4-inch (10 cm) circles.
8. Place 1-2 tablespoons of the apple mixture in the center of the circles. Brush the edges of the circle with beaten egg and fold the dough over the filling and seal the edges with a fork. Refrigerate the dough for 20-30 minutes.
9. Brush the pies with egg wash, then, using a paring knife, cut a few small slits on the top of each hand pie, then sprinkle with sugar (optional).
10. Bake for 20-25 minutes or until golden brown. Allow to cool slightly before serving.

LANGKA PIE | Jackfruit Pocket Pie Recipe
Hello my lovelies! Today's recipe is Langka Pocket Pie~!
I decided to make this because I just wanted to eat some Peach Mango Pie from Jollibee lol But I remembered I still had some sweetened langka my mother made and thought it would be a good idea to just make my own langka version of the peach mango pie. This turned out better than I expected and I hope you give this a try if you have the time. It is a little time consuming but the results are worth it :)
How to Make Langka Pie
~English~
INGREDIENTS:
~Pie
55 g (1/4 cup) Salted Butter, cold
118 ml (1/2 cup) Milk
1 Egg Yolk
300 g (2 1/2 cup) All Purpose Flour
25 g (2 tbsp) Sugar
*refrigerate for atleast 30 minutes
~langka / jackfruit filling
473 g (2 cups) Sweetened Jackfruit
30 ml (2 tbsp) Water
15 g (2 tbsp) Cornstarch
Egg wash *optional (1 egg + splash of water)
Cooking Oil *for frying
Paano Gumawa ng
~Tagalog~
SANGKAP:
~Pie
55 gramo (1/4 tasa) Maala na Mantikilya, malamig
118 ml (1/2 tasa) Gatas
1 Pula ng Itlog
300 gramo (2 1/2 tasa) All Purpose Flour
25 gramo (2 kutsara) Asukal
*palamigin ng hindi kukulang sa 30 minuto
~langka / jackfruit filling
473 gramo (2 tasa) Minatamis na Langka
30 ml (2 kutsara) Tubig
15 gramo (2 kutsara) Cornstarch
Egg wash *optional (1 egg + splash of water)
Cooking Oil *for frying
