How To make Fudge Cakes
2/3 cup Pillsbury's Best All-Purpose Flour* -- sifted
1/2 teaspoon double-acting baking powder
1/2 teaspoon salt
1/4 cup butter
1 cup sugar
2 egg yolks
unbeaten
1/4 cup milk
2 ounces unsweetened chocolate :
melted
1/2 cup Funsten's Nuts chopped
2 egg whites :
stiffly beaten
Sift together the flour, baking powder, and salt. Cream butter and gradually add sugar, creaming well. Add egg yolks, milk and melted unsweetened chocolate. Blend in the dry ingredients;mix thoroughly. Stir in nuts. Fold in 2 stiffly beaten egg whites. Turn into 9 x 9 inch pan, well greased and lightly floured on bottom. Bake in moderate oven (350 degrees) 25 to 30 minutes. Cool and frost with Chocolate Frosting. Cut into bars or squares. *For use with Pillsbury's Best Self-Rising Flour, omit baking powder and salt. FOR CUPCAKE brOWNIES: Fill muffin pans, lined with paper baking cups, 1/4 to 1/3 full. Bake 15 to 20 minutes. Cool and frost.

Ingredients:
1 cup maida (all purpose flour)
1/2 cup super fine sugar
1/4 cup cocoa powder
2 tsp baking powder
1/4 tsp salt
3/4 cup warm milk
1/4 cup melted butter
1 tsp vanilla extract
FUDGE SAUCE:
1/2 cup caster sugar + 1/2 cup brown sugar
3 tbsp cocoa powder
1+1/4 cup boiling water
RECIPE NOTES-
This recipe is super quick. But just a few points to keep in mind so that you get all that beautiful gooeyness from the cake-
While mixing the dry ingredients for the cake batter, if your cocoa powder is lumpy, you can sift it in instead of simply adding it. Sifting will help remove all the lumps and give a smooth batter.
While pouring over boiling water, make sure to not mix it in. let the water just sit and the cake will bake beautifully.
When the cake is in the oven, check for the jiggly centre after 35 minutes of baking. If you think the cake is too liquidy from the centre, then you can bake it for an additional 10 minutes.
If you want to enhance the chocolate flavor even more, you can add 1/4tsp of coffee powder into the boiling water and then bake this cake.

One bite and you will fall in love with this super fudge cake ! It's super moist and super fudgy in texture. It's an Australian mud cake, but in simple terms it's a fudge brownie type cake. It's dense like a fudge brownie, dark and delicious but it's also super moist and tall like a chocolate cake.
I cover the chocolate mud cake with a delicious dark chocolate butter ganache which is amazing. The recipe for that is below.

DARK CHOCOLATE FUDGE CAKE RECIPE | CHOCOLATE CAKE | BIRTHDAY CAKE
Dark Chocolate Fudge Cake. ????
1/2 cup oil
1/2 cup dark/milk cooking chocolate
1 1/4 cups sugar
1 tsp vanilla essence
2 eggs ( room temperature )
1/4 cup cocoa powder
1 cup all purpose flour
1 tsp baking powder
1 tsp Salt
1 cup boiling hot water mixed with 1 tbsp coffee granules or you can skip coffee but adding hot water is must.
PREHEAT OVEN AT 170°C
stove baking: medium flame for 20 minutes.
Sift all dry ingredients, keep them aside.
Mix half cup chocolate half cup oil/ghee/butter in melt on a double boiler or microwave for 20 seconds. Mix and keep it aside.
Now, In a bowl add sugar, eggs, vanilla essence. Mix till it changes the colour. Add the chocolate mix and beat again.
Now make a mix of 1 cup hot water with 1 tbsp coffee.
Mix the wet and dry ingredients and keep on adding hot water. Whisk till everything is incorporated. Add the batter to the pan and bake for 40 minutes or until the skewer comes out clean at 150°C.
Ganache:
1 cup cream use any.
1 cup semi/dark cooking chocolate
1 cup icing sugar.
Milk if needed.
