How To make Garbanzo Soup
3 tb Butter
1/4 c Minced onion
3 c Water
1 cn (15 oz) garbanzo or
-chickpeas, drained 2 Beef bouillon cubes
1/4 ts Salt
1/4 ts Garlic salt
1/4 ts Dried mint leaves
1/8 ts Black pepper
1/4 c Macaroni, uncooked
Grated parmesan cheese Minced parsley for garnish In a 2-quart saucepan, melt butter over medium heat. Saute onion until golden. Add water, garbanzos or chickpeas, bouillon cubes, salt, garlic salt, mint leaves and pepper. Bring to a boil. Stir in macaroni. Reduce heat. Cover and simmer 20 minutes. Serve topped with Parmesan cheese and garnished with minced parsley. This Chickpea soup was far better than expected. This is one of my wife's new favorite recipes. This is not only a healthy vegan recipe, but is very delicious. While I am not a vegan (as you can see) I am going to start trying to eat better, so this will be in rotation at out house. Ingredients for 4 servings Chickpea soup:
6 tablespoons olive oil
8 cloves garlic roasted
3 Roasted serrano peppers
1/2 onion chopped
2 tablespoons ground thyme, or fresh
1 tablespoon grated fresh tumeric or powdered
1/2 teaspoon red pepper flakes, plus more for garnish
3 (15 ounce) cans chickpeas, rinsed and drained
1/4 cup sliced mushrooms (any kind will do) optional
4 cups good vegetable broth, preferably homemade
Kosher salt, to taste
Red Wine vinegar, to taste
Red pepper flakes to taste
