How To make Gingerbread Bears
1 Cup Butter,or margarine
softened
2/3 Cup Brown Sugar,light :
packed
1/2 Cup Molasses,light
1 Egg,large
3 1/2 Cups Flour,All-Purpose
1 Teaspoon Salt
1 Teaspoon Baking Powder
Spices*
*Use 1 teaspoon of each spice: ground ginger, ground allspice, ground cinnamon and ground cloves. 1-In a large bowl, at low speed, beat butter, brown sugar and molasses until light and fluffy. Add egg and remaining ingredients. Beat at low speed until well mixed, constantly scraping bowl with rubber spatula. Shape dough into a ball, wrap tightly with plastic wrap adn chill 3-4 hours. 2-Lightly grease 2 large cookie sheets, turn oven to 350. On lightly floured surface using a floured rolling pin, roll 1/2 of dough 1/4-inch thick. Keep other half refrigerated. With a 3-inch cookie cutter, cat as many cookies as you can; reserve trimmings. With pancake turner, carefully place cookies on cookie sheets. Bake for 12 minutes or until edges are light brown. Remove to wire racks to cool. Repeat with other half of dough and trimmings. 3-Prepare FROSTING: In a large bowl using mixer at low speed beat 5 cups powdered sugar, 1/2 teaspoon cream of tartar, and 4 egg whites just until mixed. Turn speed to high and beat until stiff. Divide dough into small bowls and tint each with food coloring of your choice. If necessary, add a little water for spreading ease. Keep all bowls covered with plastic wrap to prevent drying out. 4-Decorate cookies: place cookies on waxed paper lined cookie sheets. With small and medium artist's brushes, paint the cookies. Happy Holidays everyone! If you celebrate Christmas, Merry Christmas. We had this idea a bit last minute but once we started dreaming it up, we just had to execute it to the fullest. We did lots of research to figure out how to bake a strong gingerbread structure to create the Gingerbread Ski Resort of our dreams. Frosty Valley (what we’ve called our village) is complete with a glowing A-frame cabin made of gingerbread & butterscotch candy, a fully edible chair lift up to the slopes, and a candy ice rink. This is the craziest thing I’ve ever baked for sure. While time consuming and a huge challenge, maybe we will make it our new holiday tradition! At least I hope to be able to do some fun creative baking each year…Or it will just be an amazing Christmas memory we’ll remember forever. Either way, I hope you enjoy the making of our epic gingerbread village/ski resort.
We ended up using two different Gingerbread recipes. Our strong structural construction gingerbread recipe:
(note: we used half butter & half shortener in an attempt to make it a bit more edible, plus half dark brown sugar & half white sugar in our first batch)
The delicious, chewy but still strong Gingerbread Cookie Recipe thanks to my bestie Sarah. We did many batches but here it is:
3/4 cup butter
1/2 cup brown sugar
1 egg
3/4 cup molasses
3 cup flour (and extra for rolling)
1/4 tsp salt
2 tsp ginger
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
Preheat to 375 F
Beat butter & sugar
Stir in egg & molasses
Fold in flour/spices/salt into butter
Chill 2 hours
Cut dough into sections
Roll on floured board
Bake 10 min (or less if you have really small cookies like some of the ones we made)

I think I have a new favorite chaffle. It’s the gingerbread chaffle topped with sugar-free caramel syrup and whipped cream. Maybe it’s because it tastes like Christmas. I am making these for our keto Christmas breakfast this year!

KETO GINGERBREAD CHAFFLE RECIPE
1 egg
1 oz cream cheese
2 tablespoons almond flour
1 tablespoon brewed coffee
2 teaspoons monk fruit or sweetener of choice
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/8 teaspoon allspice
Preheat waffle maker to medium high heat.
Whisk together all of the ingredients.
Pour gingerbread chaffle batter into the center of the waffle iron. Close the waffle maker and let cook for 3-5 minutes or until waffle is golden brown and set. If using a mini waffle maker, only pour in half the batter.
Remove chaffle from the waffle maker and serve.

item: 8 egg
4 cups shredded mozzarella cheese
1 cup almond flour
1/2 cup brewed coffee
1/4 cup monk fruit or sweetener of choice
4 teaspoons baking powder
4 teaspoons cinnamon
4 teaspoons ginger
2 teaspoons allspice
Keto Royal Icing
3 egg whites
3 3/4 cups powdered erythritol
1/2 teaspoon cream of tartar
pinch of salt
Preheat waffle maker to medium high heat. Whisk together all of the ingredients for the gingerbread house. Pour gingerbread chaffle batter into the center of the waffle iron. Close the waffle maker and let cook for 3-5 minutes or until waffle is golden brown and set. You want the waffles to be firm so they can stand the weight of the roof, so it's okay to over cook them a little.
Remove chaffle from the waffle maker. Cut each waffles into squares if needed.
Add the ingredients for the royal icing in a separate small bowl. Beat using an electric mixer until stiff and smooth.
Add icing to a piping bag. Taking four waffles, pipe icing along the bottom and adhere them to your surface. Set up the four wall and pipe frosting along the corners so the walls will stick together.
To make the A frame of the house, cut one chaffle diagonally in half. The long side of each triangle will sit against the front wall of the house with icing piped in between them. To make the roof, pipe icing along the top frame of the A-frame walls and place roof on top. Let sit for 5 minutes before decorating. (Troubleshooting - if you are having trouble getting your gingerbread house to stand, use toothpicks for support)
Decorate the gingerbread house with more icing, keto candies, nuts, or berries.

The CUTEST Homemade Christmas Cookies!
Homemade Christmas Cookies Recipe -
Ingredients:
1/2 cup white sugar
7 ounces butter, softened
1 egg
1 tsp vanilla extract
3 cups plain flour
3 tbsp meringue powder
4 tbsp water
1 tsp lemon juice
3 ½ powdered sugar, sifted
Water, for softer consistency
Steps:
1. In the mixing bowl of a stand mixer, beat butter and sugar until pale yellow. Gradually pour the egg and vanilla extract and mix until combined. Add sifted pain flour and incorporate until dough is made. Remove from the bowl, cover with plastic wrap, and refrigerate for at least 2 hours.
2. Lightly flour a silicone baking mat or parchment paper and using a rolling pin, evenly roll the dough out to about 1/4-inch thickness.
3. Using a cookie cutter, cut the dough into Christmas shapes.
4. Take the cookies to the freezer for 30 minutes before baking for them to remain their shape.
5. Bake at 350 F for 10-12 minutes or until lightly golden. Let them cool down before decorating.
6. In a medium size bowl, combine meringue powder, water and lemon juice. Gently add sifted powdered sugar and mix until stiff peaks are formed. Divide the royal icing in as many colors you need for decorating the Christmas cookies.
7. To get the right consistency for decorating, gradually add water drops until the icing drizzles down and smoothes out within 10 seconds.
8. Cover the surface of each bowl to prevent the royal icing from drying out.
9. Pour royal icing in a piping bag, cut off the end and have fun decorating the cookies.
