Ingredients
226 grams plain flour / cake flour
9 grams baking powder
14 grams ground ginger
1 tsp lemon juice
113 grams butter / marg
141 grams dark brown sugar
1 free-range egg
To decorate
writing icing (optional)
cake decorations (optional)
Method
Sift together the flour, baking powder, ginger and pour into the bowl of a food mixer, Add in the butter mix on 1 speed until the mix looks like breadcrumbs.
Stir the sugar & egg together and add into the mixer on 1st speed until the mixture clumps together. Tip the dough out, knead briefly until smooth
Preheat the oven to 180C Fan Line two baking trays with baking paper.
Roll the dough out to a 3 to 4mm thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them.
Egg wash the tops and add currents for eyes
Bake for 10 - 12 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling.
When cooled decorate with the writing icing and cake decorations, if using.

Everything I use to film:
While I am on the go, I film with my iPhone 11 Pro Max on the Dji Mobile Osmo 3. This allows me to get super smooth shots. I combine that with the either the Saramonic lavalier mic or Rhode mic and use a mount to attach it to the gimbal.

When I film at my apartment, I use my iPhone Pro Max as the main camera and my Canon 6D with the 24-105 f/4 lens for B-roll and photos. For the overhead shots, I use an overhead camera rig to mount my Canon 6D and connect a camera monitor so I can view the shot. And when my camera is set up on the ground, I use a quick release tripod. For lighting, I use the Neewer ring light and for audio, the Saramonic lavalier mic or Rhode mic (Linked Above).

To edit, I use DaVinci Resolve on my MSI GS 66 Stealth Gaming Computer. To store all of my footage, I use the SanDisk 1TB SSD Card.

Gingerbread Recipe
Ingredients US Measurements:
6 cups All Purpose Flour
½ tsp Baking Powder
4 tsp Ground Ginger
4 tsp Ground Cinnamon
½ tsp Ground All Spice
½ tsp Salt
3 Sticks (1½ cups) Unsalted Butter, Room Temperature
1½ cups Packed Light Brown Sugar
2 Large Eggs
1 cup Dark Molasses
1 tbsp Water
Ingredients by weight:
780 grams All Purpose Flour
½ tsp Baking Powder
4 tsp Ground Ginger
4 tsp Ground Cinnamon
½ tsp Ground All Spice
½ tsp Salt
339 grams (12 oz) Unsalted Butter, Room Temperature
330 grams Light Brown Sugar
2 Large Eggs
325 grams Dark Molasses
1 tbsp Water
Directions:
Sift together the dry ingredients and set aside.
Cream together the brown sugar and butter until fluffy (2-4 min). Then add in the eggs, water and molasses and mix until well combined.
Add the dry ingredients in two parts, scraping down the bowl in between each addition.
Divide the dough in two and wrap each section with cling film. Refrigerate the dough for at least two hours, preferably overnight.
After the dough has chilled, let it sit out for a few minutes before rolling it out to a ¼ inch thick.
Preheat the oven to 350F.
I like to set my pieces on a parchment covered baking sheet and into the freezer for 10 minutes before baking. This step is optional, but it helps the cookies maintain their shape while in the oven.
The baking time varies depending on the size of your cookie, so just keep an eye on them as they bake. Large pieces will take about 11-15 minutes and small pieces will take about 6-8 minutes. You know they are done when the edges of the cookie begin to darken.
*Helpful tip when making a gingerbread house or anything that requires precise edges: Immediately after you take a tray of cookies out of the oven, take a knife and cut any sides of the cookie that have spread. You will have to work quickly as this only works when the cookie is hot.
Allow the cookies to cool on the sheet pan for about 10 minutes, then transfer them to a wire rack to cool completely.

How to Decorate Gingerbread Man Cookies

Gingerbread People
Vegan Christmas baking can be so easy and you don’t even have to melt any coconut oil for these, but use marvellous olive oil instead. You can make gingerbread people out of this dough using currants for buttons or boobs, or how about some shooting stars? Elks are nice too. To avoid buying all of the spices listed you can easily use a spice mix for gingerbread. If you do purchase all of them, let yourself get lost in the aroma, they're best freshly ground... mmm… enjoy these homemade cookies with a warm body close to you and a cup of Rooibos Chai Tea... now that’s cozy!
Makes 15-20 humans, depending on their size
of course
Dry ingredients
1 cup buckwheat flour
1/2 cup rice flour
1/2 cup muscovado sugar
1 tbsp cinnamon, obviously ground
1 tsp ground ginger
1 tsp ground cardamon
1/2 tsp ground cloves
Pinch salt
1/2 tsp bicarb
Wet ingredients
1/4 cup olive oil
4-5 tbsp rice or soy milk or water
1 tbsp blackstrap molasses
Also
A few currants for buttons, eyes or boobs
ACTION!
Preheat oven to 160°C.
First mix the dry ingredients well, then add the wet ingredients and knead into a uniform dough.
Refrigerate for about 15-20 minutes.
Roll out onto a floured surface, or baking paper, cut medium-sized gingerbread humans and give them currant buttons or nipples.
Bake for about 15 minutes.
You might have to rescue the thinner ones by taking them out of the oven with a spatula and letting the thicker ones bake a few minutes longer.
If you are cutting smaller cookies, then bake for 10 minutes and keep a close eye on them, so they don’t burn.
They harden greatly when they cool.
If you undercooked all of them you can re-bake them at about 100°C for 15 minutes or longer to dry them out, or in other words make them crunchy, cookie-like.
This is a neat little trick to have up your sleeve.
Tip
For a more ‘normal’ cookie add up to 1 cup of sugar. I prefer ½ cup, which still tastes delish but is only half as naughty, and definitely not like a normal cookie.
